INGREDIENTS

– large raw prawns –  spaghetti – garlic – extra virgin olive oil – cherry tomatoes  – chilli flakes  – rocket/aragula  – lemon

Start by searing the prawns until they are pink through and lightly browned (they should only take 1-2 minutes each side). Set them aside.

Fry the garlic until light-golden brown then stir in the tomatoes and the chilli flakes. Cook for a couple of minutes more for the tomatoes to soften slightly.

Now stir in the cooked spaghetti, seared prawns and rocket, squeeze over the lemon juice and stir everything together until the spaghetti is well coated with olive oil.
