Thanks to the Thermomix, making the sugar cookie base is super easy. Start by milling the sugar (to make it easier to mix in), then add all the remaining ingredients and mix.
Use floured hands to bring it together and shape it into a flattened disc. Now wrap it up in plastic wrap and place it in the fridge to cool for at least 20 minutes.
Allow it to cool in the tin for 10 minutes then turn it out, remove the baking paper and leave it to completely cool on a wire rack.
This fruit pizza isn't actually a pizza - it's basically a large sugar cookie, smothered in cream cheese frosting and topped with a selection of seasonal fruit.
