Thermomix Hot Cross Buns
ORANGE ZEST FLOUR BUTTER MILK EGGS
SUGAR YEAST MIXED SPICE SALT CURRANTS
Zest the orange using a zester or fine grater. You can also use the Thermomix.
Melt butter then add all remaining ingredients to bowl, mix together then knead for 2 minutes.
Leave dough in a bowl covered with plastic wrap for 1-2 hours until doubled in size.
KNOCK BACK DOUGH
Tip dough onto floured surface and knock out the air. Knead for a few seconds until smooth.
Divide into 15 equal portions and roll into balls. Place on baking tray in 3 rows of 5, spaced 1 cm apart.
Leave in a warm place to prove a second time until doubled in size.
MAKE THE CROSSES
Make flour paste with flour and water and use a piping bag to pipe on the crosses.
BAKE AND GLAZE
Bake in oven for 20 minutes then use a sugar/water glaze to glaze them with a pastry brush.
