- 3 ripe bananas
- 1 teaspoon vanilla extract
- 150 g butter
- 150 g brown sugar
- 2 eggs
- 240 g all purpose flour (plain flour)
- 1 teaspoon baking powder
- 1 teaspoon baking soda (bicarbonate of soda)
Pre-heat oven to 160C / 320F. Prepare your loaf tin by lightly greasing with butter, dusting with flour and lining the bottom with baking paper.
Place bananas and vanilla extract in the Thermomix bowl. Mix for 5 seconds / speed 5. Set aside.
Add butter and sugar. Mix 30 seconds / speed 5.
Add the eggs and mashed bananas to the bowl. Mix 10 seconds / speed 4.
Add the flour, baking powder and baking soda to the bowl. Mix 20 seconds / speed 5.
Pour the mixture into the prepared bread tin.
Bake in the oven for 50-55 minutes, until a skewer comes away clean when inserted into the middle.
Remove from the tin and allow to cool on a wire rack.
