White Chocolate Macadamia Nut Cookies

These white chocolate macadamia nut cookies are soft and chewy and loaded with chocolate chips and nuts.

Ingredients

  • 1 ½ cups all purpose flour (195g)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter (115g)
  • ½ cup brown sugar (100g)
  • ¼ cup white sugar (50g)
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¼ cup white chocolate chips (85g)
  • ¾ cup macadamia nuts (100g), roughly chopped

Instructions

  • Sift together the flour, baking powder and salt and set aside.
  • In a large bowl, cream together the butter and sugars.
  • Add the egg and vanilla extract and mix well.
  • Add the flour, baking powder and salt.
  • Use a wooden spoon to stir through the chocolate chips and macadamia nuts.
  • Chill the cookie dough in the fridge for an hour.
  • Pre-heat the oven to 320F / 160C .
  • Use a cookie scoop to drop balls of cookie dough onto a lined baking sheet (around 2 tablespoons of dough per ball). Arrange them around 3 inches apart, leaving plenty of space for them to expand and spread. I put 6-8 cookies per baking sheet.
  • Bake for around 12 minutes until golden brown.
  • Cool for a few minutes on the tray and then transfer to a wire cooling rack to cool completely.
