Leftover Turkey Chili

This leftover Turkey Chili is perfect for using up those Thanksgiving or Christmas dinner leftovers.

Ingredients

  • 2 tablespoon olive oil
  • 1 large onion
  • ½ teaspoon salt
  • 2 cloves garlic
  • 2 tablespoon Mexican Seasoning
  • 1 can diced tomatoes
  • 1 cup 250 ml turkey or chicken stock
  • 1 can black beans drained and rinsed
  • 3 cups (250g) cold roast turkey, roughly chopped

Instructions

  • Heat the oil in a pan and fry the onion and salt over a low heat until soft, around 10 minutes.
  • Add the garlic and cook for a further 2 minutes.
  • Stir in the spices and cook for another 2 minutes.
  • Add the tomatoes and stock and stir well. Bring to the boil and let it bubble for around 15 minutes.
  • Add the beans and turkey to the pan and continue to simmer for a further 15-20 minutes to allow the flavors to infuse and until you have a nice thick sauce.

Notes

This recipe tastes the best using our homemade Mexican seasoning. Alternatively, you can use shop bought seasoning (see below).
