Leftover Turkey Chili
This leftover Turkey Chili is perfect for using up those Thanksgiving or Christmas dinner leftovers.

- 2 tablespoon olive oil
- 1 large onion
- ½ teaspoon salt
- 2 cloves garlic
- 2 tablespoon Mexican Seasoning
- 1 can diced tomatoes
- 1 cup 250 ml turkey or chicken stock
- 1 can black beans drained and rinsed
- 3 cups (250g) cold roast turkey, roughly chopped
Heat the oil in a pan and fry the onion and salt over a low heat until soft, around 10 minutes.
Add the garlic and cook for a further 2 minutes.
Stir in the spices and cook for another 2 minutes.
Add the tomatoes and stock and stir well. Bring to the boil and let it bubble for around 15 minutes.
Add the beans and turkey to the pan and continue to simmer for a further 15-20 minutes to allow the flavors to infuse and until you have a nice thick sauce.
