Thermomix Apple and Cinnamon Muffins

Equipment

Ingredients

  • 2 apples (around 200g) peeled, cored and quartered
  • 115 g butter
  • 120 g milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 g brown sugar
  • 300 g plain flour
  • 2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • ½ teaspoon salt

For the topping

  • 50 g butter
  • 50 g sugar granulated or caster, depending on how crunchy you like it
  • 2 teaspoon ground cinnamon

Instructions

  • Pre-heat oven to 180C / 350F. Line a muffin tray with cupcake liners.
  • Add apple to the Thermomix bowl. Chop for 3 seconds / speed 5. Set aside.
  • Add butter to the bowl. Melt for 2 minutes / 60 degrees / speed 2.
  • Add the milk, eggs, vanilla extract, sugar, apple, flour, baking powder, cinnamon and salt. Mix for 30 seconds / speed 4.
  • Use a cookie / ice-cream scoop to divide mixture equally between the prepared muffin cases.
  • Bake in the oven for 20 minutes, or until a skewer comes away clean when inserted into the middle of a muffin.
  • Allow to cool for a couple of minutes before transferring to a cooling rack.

For the topping

  • Add the butter to the Thermomix and melt for 2 minutes / 60 degrees / speed 2.
  • Mix the sugar and cinnamon in a bowl.
  • While the muffins are still warm from the oven, use a pastry brush to brush the tops with a little melted butter and then sprinkle over the cinnamon/sugar mixture.

Notes

  1. I prefer red apples for this recipe as they are sweeter. You can also use green apples - they will give a stronger apple flavour but will be less sweet.
  2. If you like your topping to be more crunchy, use granulated or raw sugar. If you prefer it to be more donut-like, use caster sugar. 
  3. These muffins freeze really well and so are great for batch-making. Store them in an airtight bag or container in the freezer for up to 3 months.
