Thermomix Donuts
These Thermomix baked donuts are light, fluffy and delicious either dipped in cinnamon sugar or glazed with a sweet sticky frosting.

- 250 g plain flour
- 150 g sugar
- 2 teaspoon baking powder
- 1 teaspoon bicarbonate soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 50 g butter
- 160 g milk
- 120 g plain yoghurt
- 1 egg
- 1 teaspoon vanilla extract
For sugar cinnamon donuts
- 50 g butter
- 4 tablespoon caster sugar
- ½ teaspoon ground cinnamon
For glazed donuts
- 240 g icing sugar
- 3 tablespoon milk
- 1 teaspoon vanilla extract
- Few drops food colouring
Pre-heat oven to 170C / 340F. Lightly grease donut trays.
Add flour, sugar, baking powder, bicarbonate soda, cinnamon and salt to the Thermomix bowl. Mix for 5 seconds / speed 3. Set aside.
Add butter to the bowl. Melt for 2 minutes / 60 degrees / speed 2.
Add milk, yoghurt, egg, vanilla extract. Mix for 5 seconds / speed 4.
Return dry ingredients to the bowl. Mix for 7 seconds / speed 4. If the mixture is not full incorporated, use a spatula to gently mix it in. Do not over mix!
Use a piping bag or spoon to divide the mixture between the donut trays. Fill to ¾ full.
Bake in the oven for around 10-12 minutes until light golden brown. The bottoms will be browner than the top, so don't allow to brown too much.
For cinnamon sugar donuts
For best results, top with cinnamon sugar while still warm.
Mix together the sugar and cinnamon on a plate or shallow bowl.
Melt butter (either in the microwave or in the Thermomix for 2 minutes / 60 degrees / speed 2).
Use a brush to lightly brush each donut and then dip into the sugar mixture. Continue to press and roll until fully coated.
For glazed donuts
For best results, allow to cool completely before adding frosting.
Add icing sugar to Thermomix bowl. Whizz for 10 seconds / speed 9 to remove any lumps.
Add milk, vanilla and food colouring (if using) and mix for 10 seconds / speed 3.
Scrape down the sides and repeat. If the frosting seems too runny, add a spoonful of icing sugar; if it seems too thick, add a drop of milk.
Either transfer to a shallow bowl and dip the donuts in, or use a spoon to pour the icing over the top of the donuts. Sprinkle over sprinkles before the frosting sets.
