Thermomix Baileys
This homemade Thermomix Baileys recipe is so quick and easy and gives you a rich creamy liqueur perfect for after dinner drinks.

- 225 g cream cooking or double/thickened cream is best
- 395 g can condensed milk
- 50 g chocolate syrup
- 30 g espresso cooled
- 1 teaspoon vanilla extract
- 350 g Irish whiskey
Add cream, condensed milk, chocolate syrup, espresso and vanilla extract to the Thermomix bowl. Mix for 20 seconds / speed 2.
Place a jug on top of the Thermomix bowl and weigh in the whiskey.
Set the Thermomix to 20 seconds / speed 2 and slowly pour in the whiskey through the hole in the lid to combine.
Pour into sterilised bottles with a good seal and refrigerate until needed.
- Cooking cream is ideal for this recipe as it is specially designed not to curdle or whip. If you don't have any then double/thickened cream will be fine.
- If you don't have an espresso machine, you can mix 1 teaspoon of instant coffee with 2 tablespoons of water.
- Be careful not to over-mix the Baileys or mix on a high speed as it may curdle.
- Any good quality Irish whiskey is fine for this recipe. If you don't have Irish whiskey you can replace with Scotch, but make sure it is a smooth whisky.
