Thermomix Passion Fruit Tarts

Ingredients

For the Pastry

  • 100 g sugar
  • 200 g butter chilled
  • 370 g plain flour
  • 1 egg
  • pinch salt
  • 1 teaspoon vanilla extract

For the Passion Fruit Curd filling

  • 100 g passionfruit juice approx. 4 large passion fruit
  • 110 g sugar
  • 5 egg yolks
  • 1 egg
  • 115 g butter
  • ½ teaspoon vanilla extract

Instructions

For the Pastry

  • Place the sugar in the Thermomix Bowl. Mill for 10 seconds / speed 10.
  • Chop the butter into pieces and add to the bowl with the flour, egg, salt and vanilla extract. Mix for 30 seconds / speed 5.
  • Turn out onto a floured surface and quickly bring it together with your hands. Shape into a flattened disc.
  • Wrap the pastry in plastic wrap or place in an airtight plastic bag and chill in the fridge for at least 30 minutes.

For the passionfruit curd

  • First prepare the passion fruit juice: Scoop out the pulp from the passionfruit and use a spoon to pass it through a fine mesh sieve. Set aside.
  • Add the sugar to the Thermomix bowl. Mill for 10 seconds / speed 10.
  • Add the passion fruit juice, egg yolks, egg, butter and vanilla extract and cook for 20 minutes / 80 degrees / speed 3.

Making the tarts

  • Pre-heat the oven to 180 C / 360 F. Grease and flour a 12-hole muffin tin.
  • Roll the pastry out on a floured surface.
  • Use a 4-inch cookie cutter to cut out 12 circles of pastry.
  • Press the pastry circles into the muffin tin, making sure you press firmly into the base and sides to prevent any air bubbles.
  • Take a fork and prick the pastry all over the base.
  • Put the muffin tin in the oven and bake for 10 minutes. Allow to cool in the tin.
  • Reduce the oven temperature to 150 C / 300 F.
  • Spoon the passion fruit curd into the pastry cases. Go right to the top of the pastry; they won't rise when cooking.
  • Bake in the oven for 10-12 minutes until set. You can tap the tart tin and if it wobbles they aren't quite ready.
  • Transfer to a wire cooling rack to cool.
  • When ready to serve, decorate with whipped cream and passion fruit pulp, or with raspberries and mint leaves.

Notes

Got leftover pastry? Use cookie cutters to cut out shapes. Place on a lined baking sheet and bake in the oven for 10 minutes at 180 C and you will have some delicious cookies to nibble on.
