Pineapple Margarita

This Pineapple Margarita recipe gives a sweet tropical twist to a classic margarita, for a smooth and delicious cocktail.

Ingredients

  • 3 ounces pineapple juice
  • 2 ounces tequila
  • 1 ounce Cointreau
  • 1 ounce lime juice freshly squeezed

Instructions

  • To prepare your margarita glass
  • Coarsely grind some salt onto a plate or shallow bowl.
  • Wet the rim of the glass with lime juice (you can use a quarter of lime, or just use the shell of the lime you just squeezed for lime juice).
  • Dip the rim of the glass into the salt, rotating as you go, until it is fully coated.
  • To make the margarita
  • Measure the pineapple juice, tequila, Cointreau and lime juice into a cocktail shaker.
  • Half fill the shaker with ice cubes, tightly secure the lid and shake vigorously for a minimum of 10 seconds.
  • Fill your prepared margarita glass with ice cubes and strain the drink into the glass
  • Garnish with a slice of lime and slice of fresh pineapple.

Notes

1. I use freshly squeezed pineapple juice using my cold press juicer. If substituting for shop bought pineapple juice, ensure you use a good quality one, not from concentrate.
2. Use a good quality tequila. The best tequila is a blanco tequila made from 100% agave, as it is more pure in flavor. If you prefer something a bit more mellow, opt for a reposado, which has been aged in oak. Avoid gold tequila, which has added colors and caramel.
3. Substitutes for Cointreau include other orange liqueurs, such as Grand Marnier or Triple Sec.
