Thermomix Mayonnaise

This Thermomix Mayonnaise recipe is so easy and you will have a rich creamy homemade mayo in your fridge in just five minutes.

Ingredients

  • 2 egg yolks
  • 1 tablespoon white wine vinegar or lemon juice
  • 1 tsp Dijon mustard
  • pinch salt & pepper
  • 275 g oil use a flavourless oil such as grapeseed, canola, or groundnut

Instructions

  • First place a jug on the lid of the Thermomix and measure out the oil. Set aside.
  • Next add the egg yolks, mustard, vinegar or lemon juice and a generous sprinkling of salt and pepper to the Thermomix bowl.
  • Set the timer to 4 minutes / 37 degrees / speed 4.
  • After 30 seconds (so with 3.5 minutes remaining on the timer) slowly pour the oil onto the lid of the Thermomix. The oil will slowly seep through the gap between the MC and the lid over the remaining time.
  • Taste and season as required and serve.

Notes

For the best results, ensure your ingredients are at room temperature, so remove the eggs and mustard from the fridge 30 minutes before using. 
If you are using a TM31 or TM5 measuring cup, you may need to hold the measuring cup in place with one hand while you pour the oil with the other hand. This is because the gap between the measuring cup and the lid is slightly larger on this version.
