Equipment

Ingredients

  • 40 g parmesan finely grated
  • 60 g cornflakes finely crushed
  • 500 g chicken breast or tenderloin
  • 2 eggs
  • 50 g all purpose flour
  • salt & pepper to season

Instructions

  • Preheat oven to 200C/400F
  • Mix together parmesan and cornflakes in a bowl.
  • Add flour to another bowl and season with salt & pepper.
  • Whisk eggs into a third bowl.
  • Cut chicken into desired size.
  • Dip each chicken piece first in the flour, then egg, then cornflake mixture and place onto baking tray lined with baking paper.
  • Bake in oven for 20 minutes at 200C/400F.

Notes

You can crush up the cornflakes in your food processor. For a crunchier finish, leave them slightly less crushed.
I also often add garlic salt and mixed Italian herbs to my mixture. Feel free to add other herbs and spices too.
If you have a Thermomix, grate the Parmesan for 10 seconds on speed 9 and the Cornflake for 5 seconds on speed 6. This makes a fine crumb as shown in the pictures for this recipe.
