Cornflake Chicken Nuggets
This homemade cornflake chicken nuggets recipe is perfect for a quick and easy midweek kids dinner.

- 40 g parmesan finely grated
- 60 g cornflakes finely crushed
- 500 g chicken breast or tenderloin
- 2 eggs
- 50 g all purpose flour
- salt & pepper to season
Preheat oven to 200C/400F
Mix together parmesan and cornflakes in a bowl.
Add flour to another bowl and season with salt & pepper.
Whisk eggs into a third bowl.
Cut chicken into desired size.
Dip each chicken piece first in the flour, then egg, then cornflake mixture and place onto baking tray lined with baking paper.
Bake in oven for 20 minutes at 200C/400F.
You can crush up the cornflakes in your food processor. For a crunchier finish, leave them slightly less crushed.
I also often add garlic salt and mixed Italian herbs to my mixture. Feel free to add other herbs and spices too.
If you have a Thermomix, grate the Parmesan for 10 seconds on speed 9 and the Cornflake for 5 seconds on speed 6. This makes a fine crumb as shown in the pictures for this recipe.
