Pasta Bolognese Sauce
This spaghetti bolognese sauce is rich and meaty and is always a hit with the kids.

- 1 kg mince (2lb)
- 2 cloves garlic crushed or finely chopped
- 2 medium onions finely chopped
- 1 teaspoon dried Italian herbs
- 2 bay leaves
- 3 tbsps tomato paste
- 1 litre chicken stock (2 pints)
- Salt & Pepper
Heat some olive oil in a large frying pan. Add the garlic and onions and cook until softened.
Add the mince and cook until lightly browned, breaking it up as you go so that you don’t have any big lumps of meat.
Add herbs & bay leaves and give a good stir.
Add the tomato paste and mix it all together.
Pour in the stock, season with salt & pepper and bring to the boil
Let it cook & bubble for a good 30 minutes, stirring occasionally. You want to end up with a good thick sauce.
Serve over pasta and sprinkle with grated parmesan cheese.
Remove bay leaves before serving.
You can also add sliced mushrooms to this recipe. I add around 200g, thickly sliced before adding the tomato paste.
Allow 250g pasta per adult, less for children.
