Step 2: Then add the butter and mix
Store your garlic butter in the fridge and it will last several weeks.
Start by adding the milk, yeast and sugar and mixing over a low heat. Then you just add the flour, salt and olive oil and let the Thermomix do all the hard work.
Now it's time to proof the dough. To do this, place it in a large, lightly oiled bowl and cover it with a damp tea towel.
Now leave it somewhere warm to rise. You want it to double in size and be pillowy and soft. The time this takes will depend on how warm your house is. It should be around 1.5 - 2 hours.
Turn the dough onto a floured surface and knock out the air. Shape it into a rectangle with your hands and then use a rolling pin to roll it out to a large rectangle.
STEP 4: ASSEMBLE THE GARLIC BREAD
Use a knife to spread out the garlic butter all over the dough. Save 1-2 tablespoons for brushing on top once it is cooked.
Now, starting at the long edge, roll the dough up into a long scroll shape.
Use a sharp knife to cut the dough into 18 equal portions.
Take each portion and stretch the dough over the garlic butter-covered sides, pinch the seams and roll it into a ball so that the garlic butter is tucked inside.
Now it's time for the second proof. Place the baking tray on the top shelf of a cold oven, with a pan or bowl of boiling water in the bottom, and shut the oven door.
Brush it with the remaining garlic butter, and sprinkle with some sea salt flakes if you wish. Transfer to a wire rack to cool, or serve right away.
