- 80 g pitted dates
- 1 banana (ripe)
- 200 g rolled oats
- 50 g desiccated coconut
- 120 g smooth peanut butter
- 20 g maple syrup
- 1 egg
- 50 g dried cranberries or dried fruit of choice, eg raisins
- 30 g pumpkin seeds (pepitas) or seeds of choice, eg sunflower seeds
- 30 g flaked almonds or nuts of choice, eg pistachios
Pre-heat the oven to 160 C / 320 F
Weigh the dates into the Thermomix bowl. Cover the dates with water and set aside to soak for 15 minutes.
Drain the dates (use a colander, sieve or the Thermomix simmering basket) then place them back into the Thermomix bowl. Chop for 10 seconds / speed 7. Scrape down the bowl.
Add the banana to the bowl. Mix for 5 seconds / speed 5.
Add all the remaining ingredients to the bowl. Mix for 20 seconds / REVERSE / speed 3.
Use an ice cream scoop to evenly portion the cookie mixture. I like to scoop the mixture into a cookie cutter then use a teaspoon to press the mixture down. This helps create a nice round cookie.
Bake in the pre-heated oven for 20 minutes until starting to brown.
Cool on a cooling rack and store in an airtight container on the counter for up to 3 days or in the fridge for up to 7 days.
