Oven Baked Barbecue Ribs

These Oven Baked Barbecue Ribs are finger-licking good and so simple to make. Perfect for entertaining or for a crowd-pleasing family meal.

Ingredients

  • 2 kg Baby Back Ribs 4 pounds (4 racks)

For the rub

  • 1 tablespoon brown sugar
  • 2 teaspoon smoked paprika
  • 2 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon cumin
  • 2 tablespoon olive oil

For the sauce

  • 2 cups barbecue sauce (350g bottle)
  • 4 cloves garlic finely chopped or minced
  • 2 tablespoon olive oil
  • ½ tablespoon Worcestershire sauce

Instructions

Prepare the Ribs

  • Check the back of the ribs to see if they have a papery skin. (Sometimes the butcher will have already removed this). If so, you will need to remove it. To do this, use a kitchen towel to get a good grip on one end of the rib rack, and pull the skin off with your other hand.
  • Line two baking trays with tin foil and place the ribs on top. Two racks per tray.
  • Prepare the rub by mixing together all the dry ingredients - brown sugar, paprika, garlic salt, onion powder, black pepper and cumin.
  • Sprinkle the rub all over ribs. Then drizzle with the olive oil and use your hands to massage it all into the ribs - front and back.
  • You can now cover and set aside in the fridge for several hours or overnight if you wish. If not - proceed straight to cooking them.

Cook the ribs

  • Pre-heat the oven to 180C / 350F.
  • Cover the ribs with cooking foil and bake in the oven for 2 hours.
  • Meanwhile, mix together the sauce ingredients and set aside.
  • Once the two hours is up, remove the ribs from the oven and turn up the oven heat to 240C / 460F.
  • Uncover the ribs and use a basting brush to generously cover the ribs with the sauce.
  • Leave them uncovered and return them to the oven for 10 minutes.
  • Now switch the oven setting to Grill (Broil) and, one tray at a time, place the ribs under the grill for 2-3 minutes, until slightly blackened on top.
  • Remove from the grill and leave to rest for 10 minutes.
  • Use a sharp knife to cut the ribs into individual ribs and serve.

Notes

  1. Make sure you use a good quality barbecue sauce for this recipe (not the kind you would squirt on a hot dog at a cheap barbecue stall). You might need to try a few different ones before you find your favourite.
  2. If you want to give the ribs a kick of heat, add some cayenne pepper to the rub.
