Oven Baked Barbecue Ribs
These Oven Baked Barbecue Ribs are finger-licking good and so simple to make. Perfect for entertaining or for a crowd-pleasing family meal.

- 2 kg Baby Back Ribs 4 pounds (4 racks)
For the rub
- 1 tablespoon brown sugar
- 2 teaspoon smoked paprika
- 2 teaspoon garlic salt
- 1 teaspoon onion powder
- 1 teaspoon freshly ground black pepper
- ½ teaspoon cumin
- 2 tablespoon olive oil
For the sauce
- 2 cups barbecue sauce (350g bottle)
- 4 cloves garlic finely chopped or minced
- 2 tablespoon olive oil
- ½ tablespoon Worcestershire sauce
Prepare the Ribs
Check the back of the ribs to see if they have a papery skin. (Sometimes the butcher will have already removed this). If so, you will need to remove it. To do this, use a kitchen towel to get a good grip on one end of the rib rack, and pull the skin off with your other hand.
Line two baking trays with tin foil and place the ribs on top. Two racks per tray.
Prepare the rub by mixing together all the dry ingredients - brown sugar, paprika, garlic salt, onion powder, black pepper and cumin.
Sprinkle the rub all over ribs. Then drizzle with the olive oil and use your hands to massage it all into the ribs - front and back.
You can now cover and set aside in the fridge for several hours or overnight if you wish. If not - proceed straight to cooking them.
Cook the ribs
Pre-heat the oven to 180C / 350F.
Cover the ribs with cooking foil and bake in the oven for 2 hours.
Meanwhile, mix together the sauce ingredients and set aside.
Once the two hours is up, remove the ribs from the oven and turn up the oven heat to 240C / 460F.
Uncover the ribs and use a basting brush to generously cover the ribs with the sauce.
Leave them uncovered and return them to the oven for 10 minutes.
Now switch the oven setting to Grill (Broil) and, one tray at a time, place the ribs under the grill for 2-3 minutes, until slightly blackened on top.
Remove from the grill and leave to rest for 10 minutes.
Use a sharp knife to cut the ribs into individual ribs and serve.
- Make sure you use a good quality barbecue sauce for this recipe (not the kind you would squirt on a hot dog at a cheap barbecue stall). You might need to try a few different ones before you find your favourite.
- If you want to give the ribs a kick of heat, add some cayenne pepper to the rub.
