Thermomix Dumplings

This Thermomix Dumplings recipe is a Thermomix adaptation of a traditional Chinese dumpling recipe, loved by generations of families.

Ingredients

For the Dumpling Filling

  • 5 spring onions
  • 2 inch piece fresh ginger
  • 500 g pork mince
  • 1 teaspoon sesame oil
  • 1 tsp salt
  • 50 g soy sauce
  • 30 g vegetable oil
  • 1 egg
  • 500 g Chinese cabbage (aka Napa cabbage or Wombok)
  • 1 teaspoon salt extra

For the Dumpling Wrappers

  • 390 g plain flour
  • 220 g water (room temperature)

Instructions

To Make the Filling

  • Roughly chop the spring onion and add to the Thermomix bowl. Cut the ginger into quarters and add to the Thermomix bowl. Chop for 5 seconds / speed 5. Scrape down the bowl and repeat 5 seconds / speed 5.
  • Add the pork, sesame oil, salt, soy sauce, vegetable oil and egg. Mix for 10 seconds / speed 3 and then use the Dough function / 1 minute.
  • Transfer the mixture to a bowl and set aside in the fridge to marinade for 1-2 hours.
  • 30 minutes before you are ready to make the dumplings, cut the cabbage into large pieces and add half (250g) to the Thermomix bowl with half a teaspoon of salt. Chop for 10 seconds / speed 4.
  • Transfer the chopped cabbage to the simmering basket and set aside to drain for 30 minutes. (Place the simmering basket over a bowl or in the sink as liquid will seep out of the cabbage).
  • Repeat with the remaining 250g cabbage and ½ teaspoon of salt. Chop for 10 seconds / speed 4 then add to the simmering basket with the rest of the cabbage.
  • After 30 minutes is up, squeeze out any excess water from the cabbage.
  • Return the pork mixture and the cabbage to the bowl and mix for 5 seconds / REVERSE / speed 5.

To Make the Dumpling Wrappers

  • Add the flour and water to the Thermomix bowl. Mix for 10 seconds / speed 4 and then use the Dough function / 1 minute.
  • Turn the dough out onto a lightly floured surface. Divide the dough in half. Shape each half into a 12-inch long roll and cut the roll into 24 x ½ inch pieces.
  • Take a ½ inch piece of dough and roll it into a ball. Then press the ball flat with the heel of your hand.
  • Now use your non-dominant hand to turn the dough as you roll it out with a rolling pin using your dominant hand. (Turn and roll, turn and roll). This will help make the centre of the wrapper thicker than the edge.
  • Repeat with all the dumpling pieces until you have made all the wrappers.

To Make the Dumplings

  • Take a dumpling wrapper and place it on the palm of your hand.
  • Place a tablespoon of filling into the centre of the wrapper - you want it to be full but not so much that it oozes out.
  • Fold the wrapper over and pinch the edges together.
  • Place the dumpling flat on the table with the pinched edges facing up, and flatten the bottom slightly. Now pinch a few pleats into the dumpling to create a pouch.

To Cook the Dumplings

  • Place the dumplings into the Varoma tray.
  • Add 750g of water to the Thermomix bowl. Place the Varoma tray on top and steam for 20 minutes / Varoma / speed 1. (Use steaming function / 1 minute for TM7).
