Weigh the sugar into the Thermomix. Mill for 10 seconds / speed 9.
Add the remaining ingredients to the Thermomix bowl. Mix for 10 seconds / speed 7.
Scrape down the bowl. Repeat for 5 seconds / speed 7.
Turn the dough out onto a floured surface. It is quite a sticky dough so you will need to use a spatula to scrape it out of the Thermomix bowl.
Use floured hands to bring the dough together and shape into a flattened disc. Wrap it with plastic wrap and chill in the fridge for 20 minutes.
Meanwhile, pre-heat the oven to 180 C / 360 F and prepare your cake tin by greasing and flour the sides and line it with baking paper.
Once the dough has chilled, place the disc in the center of your tin and use your hands to gently and evenly press it out towards the edges until it is almost touching the edges.
Bake in the oven for around 17 minutes - don't allow it to get too brown.
Allow it to cool in the tin for 10 minutes then remove the baking paper from the bottom and leave it to cool completely on a cooling rack.
