Weigh the dates into the Thermomix bowl. Cover the dates with water and set aside to soak for 15 minutes.
Drain the dates (use a colander, sieve or the Thermomix simmering basket) then place them back into the Thermomix bowl. Chop for 10 seconds / speed 7. Scrape down the bowl.
Add the peanut butter, oats and maple syrup to the bowl and mix for 30 seconds / speed 8. Scrape down the bowl and repeat 30 seconds / speed 8. The mixture should hold together when pressed between your fingers. If it's not there yet, blend for a further 20 seconds. Use a knife to chop the peanuts into small pieces. Add to the bowl and use the spatula to mix well.
Add around 1 ½ tablespoons of mixture into each ice cube tray compartment. Press down to compact the mixture. Chill in the fridge until ready to top with chocolate.
Clean and dry the Thermomix bowl.
Add the chocolate to the bowl. Chop for 5 seconds / speed 8.
Add the coconut oil to the bowl. Melt for 4 minutes / 50 degrees / speed 2.
Remove the trays from the fridge. Pour around 1 teaspoon of chocolate over each energy bite. Tilt the tray to ensure even coverage.
Store in the fridge for at least 30 minutes or until ready to serve.
Pop each bite out of the ice cube tray and store in an airtight container in the fridge for up to 7 days or in the freezer for up to 3 months.
