Thermomix Choc Chip Cookies

This gorgeous chewy Thermomix choc chip cookies recipe is an absolute classic that should be in everybody’s repertoire.

Equipment

Ingredients

  • 125 g butter
  • 150 g brown sugar
  • 70 g white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 200 g plain flour
  • 1 teaspoon baking soda bicarbonate of soda
  • ¼ teaspoon salt
  • 150 g chocolate chips dark or milk chocolate or a combination of the two

Instructions

  • Add butter and sugars to the Thermomix bowl. Cream together for 1 minute / speed 4.
  • Add the egg and vanilla extract. Mix for 1 minute / speed 4.
  • Add the flour, baking soda and salt. Mix for 40 seconds / speed 4.
  • Weigh in the chocolate chips. Use a spatula to stir them into the mixture.
  • Transfer the cookie dough to a bowl and chill in the fridge for an hour.
  • Pre-heat the oven to 170C / 340F.
  • Use a cookie scoop to divide the mixture onto a baking tray. Make sure you leave enough space between the cookies for them to expand and flatten out.
  • Bake in the oven for 10 minutes until golden brown.
  • Allow to cool for a few minutes on the tray before transferring to a cooling rack to cool completely.

Notes

  1. Be sure to chill your cookie dough for at least an hour before you bake them. This will help the cookies keep their shape.
  2. Use a cookie scoop to make it quicker and easier to scoop out the cookie dough. This will also ensure they are all an even size.
  3. When placing cookies on the baking tray, be sure to leave enough space in between them as they will expand and flatten out as they bake.
  4. If you are baking these in batches, make sure your baking sheet is cool before you put the next batch on.
  5. Before you put them in the oven, add a couple of extra chocolate chips to the top of each ball of dough to help them look better once baked.
  6. Don't worry if the cookies seem soft when they come out of the oven, they will continue to firm up as they cool.
