Thermomix Napolitana Sauce

- 3 cloves garlic
- 20 g extra virgin olive oil
- 1 can tinned tomatoes (400g)
- 1 teaspoon sugar
- small handful basil leaves
- pasta to serve
Peel the garlic and add to the Thermomix bowl. Chop for 3 seconds / speed 7.
Scrape down the bowl and add the olive oil. Saute the garlic for 2 minutes / 100 degrees / speed 1.
Add the tomatoes and sugar to the bowl. Cook for 20 minutes / 100 degrees / speed 1 / MC off. (Place the simmering basket on the lid if you have a TM6, TM5 or TM31) Roughly tear the basil leaves into pieces and add to the bowl. Season with salt & pepper to taste. Stir for 20 seconds / speed 1.
Serve stirred through pasta with a sprinkling of parmesan and some additional basil leaves.
