This Thermomix Napolitana Sauce (or Napoli Sauce) is the perfect easy store cupboard recipe for days when you have no time to shop and no energy to cook.

When I have no time to go to the shops, and no energy to cook, this Thermomix Napolitana Sauce for pasta is my go-to dinner recipe.
It is super simple, uses basic store cupboard ingredients that I always have on hand, it's cheap, and everyone in my family actually loves it too!
The sauce will also last in the fridge for a few days if you want to double-batch, and it also freezes well.

Traditional napolitana sauce uses just fresh tomatoes, olive oil, basil and seasoning. It's all about the flavour of the tomatoes. If you want to add onions or oregano or other herbs too, that's fine!
- Tinned tomatoes - obviously the star of the dish, so make sure you use good-quality tinned tomatoes. You can use fresh tomatoes if you have a lot to use up, but I think the best results come from tinned tomatoes.
- Sugar - just a teaspoon of sugar helps take the tartness out of the tomatoes and brings out their natural flavour.
- Garlic
- Extra Virgin Olive Oil
- Fresh Basil Leaves
- Pasta to serve (or use it top pizzas)

The reason this is one of my go-to recipes when I have no energy to cook, is that it is very quick, easy and hands-off.



Start by chopping the garlic, then sauteeing it, and then just add the remaining ingredients and set it to cook. Finally stir in the basil leaves, and you're done!
Now you just need to cook some pasta and stir it all through. You can cook the past in the Thermomix bowl too, but I usually set it to cook on the stovetop while the sauce cooks in the Thermomix.

Thermomix Napolitana Sauce
Ingredients
- 3 cloves garlic
- 20 g extra virgin olive oil
- 1 can tinned tomatoes (400g)
- 1 teaspoon sugar
- small handful basil leaves
- pasta to serve
Instructions
- Peel the garlic and add to the Thermomix bowl. Chop for 3 seconds / speed 7.
- Scrape down the bowl and add the olive oil. Saute the garlic for 2 minutes / 100 degrees / speed 1.
- Add the tomatoes and sugar to the bowl. Cook for 20 minutes / 100 degrees / speed 1 / MC off. (Place the simmering basket on the lid if you have a TM6, TM5 or TM31)
- Roughly tear the basil leaves into pieces and add to the bowl. Season with salt & pepper to taste. Stir for 20 seconds / speed 1.
- Serve stirred through pasta with a sprinkling of parmesan and some additional basil leaves.
