This Thermomix Vegetable Lasagne is loaded with fresh vegetables and paired with a creamy cheese sauce for a delicious vegetarian lasagne.

This rich and cheesy vegetable lasagne is a great alternative to a traditional lasagne, and perfect for vegetarians or those looking to cut down on red meat.
It's equally good as a family meal or a casual dinner party with friends.
Making a lasagne can traditionally be quite time-consuming and hard work having to make both a ragu and a cheese sauce and then assemble and bake it.
The great thing about the Thermomix is it reduces some of this workload. I don't know about you, but making a cheese sauce in the Thermomix was life changing!
This lasagne is perfect for making ahead of time and then reheating when the family are ready to eat. It also re-heats really well for school lunches or lazy dinner days and can be frozen for later.
I also love that you can make the vegetable ragu sauce ahead of time and then keep it in the fridge until needed, making it quicker to prepare later.

Ingredients
There are three parts to this lasagne recipe: the vegetable ragu, the cheese sauce, and the lasagne itself.
For the vegetable ragu:

The vegetables I have chosen are based on a basic ratatouille recipe. You can mix up the vegetables you use, based on what you have in your fridge, or what are your favourites.
Mushrooms, spinach and roasted pumpkin are all good options to include too.
- Onions
- Garlic
- Olive oil
- Eggplant
- Red capsicum
- Zucchini
- Tinned tomatoes (can substitute with fresh but might want to add 1/ 2 cup of vegetable stock to add. alittle liquid).
- Tomato paste (not pictured above, sorry!)
- Italian herbs (can substitute with oregano or other herbs. Can also substitute with fresh herbs).
- Fresh basil
For the cheese sauce:

- Cheese - I usually use cheddar. You want something that has a good flavour but nothing too overpowering.
- Butter
- Plain flour
- Milk
For the lasagne:
- Lasagne sheets - make sure you buy lasagne sheets that do not need to be pre-cooked. They are usually labelled 'Instant' on the packet. This way you can just layer them on the lasagna straight from the packet.
- Cheese - again I use cheddar, or a mix of mozzarella and parmesan. Shop-bought pizza cheese works well too here as it has the right balance of flavour and stringiness.
How to make Vegetable Lasagne in the Thermomix

Full step-by-step instructions can be found in the recipe card at the bottom of the post.
There are four stages to making this lasgna:
- Make the vegetable ragu
- Make the cheese sauce
- Assemble the lasagna
- Bake the lasagna
Step 1: Make the Vegetable Ragu
Making the ragu is super simple. Start by chopping the onion and garlic and sauteeing in olive oil.
Next add the vegetables and herbs and cook for 5 minutes before adding the tomatoes



Then you just need to let it cook away for 20 minutes. You can set aside or refrigerate until ready to make the lasagne.
Step 2: Make the Cheese Sauce
Firstly, grate the Cheese and set aside. Then, melt the butter for 2 minutes.



Next, add flour and milk and cook for 13 minutes. And finally, add the grated cheese and cook for 2 minutes.
Step 3: Assemble the Lasagne
Once you have both sauces ready, it's time to assemble the lasagna. How many layers you make will depend on the size of your dish and how much sauce you add to each layer.
I like to aim for at least three layers of the lasagna sheets.

Start by adding a thin layer of the ragu on the bottom of the lasagna dish. Then place the lasagna sheets on top.
Next pour over the cheese sauce.

And then repeat the layers: ragu, lasagna, cheese sauce, ragu, lasagna, cheese sauce - until you have used up all of your sauces.
It doesn't really matter if you end up with ragu or cheese sauce on top.
Once you have finished layering, sprinkle grated cheese over the top of the lasagna and it is ready to go in the oven.

Step 4: Bake the Lasagne
The lasagna will take around 30 minutes in a pre-heated oven. The cheese should be nicely browned and bubbling when you take it out of the oven.

What to serve with Lasagne
The lasagna is quite rich and so doesn't need anything too complex to go with it.
Personally, I think this is best served with a leafy green salad and perhaps some Thermomix garlic bread on the side.
You could also serve some steamed vegetables such as asparagus or broccoli.

Thermomix Vegetable Lasagne
Ingredients
For the vegetable ragu
- 2 medium onions
- 3 cloves garlic
- 30 g olive oil
- 250 g red capsicum (1 large)
- 400 g eggplant (2 medium)
- 250 g zucchini (2 medium)
- 1 teaspoon Italian herbs
- 1 small handful fresh basil leaves
- 400 g tinned tomatoes (1 can)
- 1 tablespoon tomato paste
For the cheese sauce
- 100 g cheese
- 30 g butter
- 30 g flour
- 300 g milk
For the lasagne
- lasagne sheets approximately 9 sheets
- 100 g cheese
Instructions
To make the vegetable ragu
- First, prepare the vegetables: Roughly chop the eggplant, capsicum and zucchini. Roughly chop the basil leaves.
- Peel and quarter the onion and add to the Thermomix bowl together with the peeled garlic cloves. Chop for 4 seconds / speed 5.
- Add the olive oil to the bowl and cook for 5 minutes / 100 degrees / speed 1.
- Add capsicum, zucchini, herbs and basil to the bowl. Season with salt & pepper to taste. Cook for 5 minutes / 100 degrees / REVERSE / speed stir.
- Add the eggplant to the bowl. Cook for 15 minutes / 100 degrees / REVERSE / speed stir.
- Add the tomatoes and tomato paste. Cook for 20 minutes / 100 degrees / REVERSE / speed stir / MC off. Place the simmering basket on top of the Thermomix (not applicable to the TM7).
- Set aside until ready to assemble the lasagne.
To make the cheese sauce
- Cut the cheese into cubes and add to the Thermomix bowl. Grate for 5 seconds / speed 8. Set aside.Note: You should also grate the additional cheese for the top of the lasagne at the same time. Set it aside in a separate bowl for later.
- Add the butter to the bowl. Melt for 2 minutes / 60 degrees / speed 2.
- Add the flour and milk to the bowl. Cook for 10 minutes / 100 degrees / speed 3.
- Add the grated cheese. Cook for a further 2 minutes / 100 degrees / speed 1.5.
To assemble the Lasagne
- Line the lasagne dish with a thin layer of ragu.
- Place the lasagne sheets on top.
- Pour over a thin layer of cheese sauce, followed by another thin layer of ragu, then another layer of lasagne sheets.
- Continue layering in this order until you have used up all your ragu and cheese sauce. It doesn't matter if you finish off with a layer of ragu or cheese sauce.
- Sprinkle the grated cheese over the top.
- Bake in the oven for 25 minutes. It should be golden brown and bubbling.
