This easy Thermomix granola is crunchy, lightly sweetened and completely customisable with your favourite nuts, seeds and dried fruit.

A bowl of granola with Greek yoghurt and berries is one of my favourite ways to start the day.
But, I'm kinda fussy when it comes to my granola. I've yet to find a shop-bought granola that ticks all my boxes. So I make my own so I can have it exactly how I like it.
I can choose exactly how sweet it is, which nuts and seeds to use, and what dried fruit to add.
I've had a recipe for Homemade Granola on my website for years, but I don't know why I didn't think of making it in the Thermomix before now.
Granola is already a simple recipe to make, but the Thermomix makes it even easier - and it's all made in one bowl, meaning less washing up.

Ingredients
You will need the following ingredients for this recipe. Exact quantities can be found in the recipe card at the bottom of this post.

The beauty of making your own granola is how easy it is to adapt to exactly how you like it. So feel free to substitute the nuts, seeds, fruit etc to suit what you like.
- Oats - just cheap, plain rolled oats are perfect for this recipe. Don't go for instant oats.
- Nuts - choose whichever nuts you like to add to your granola. My favourite to use are raw almonds and cashew nuts. Other nuts: pistachios, Brazil nuts, pecans, and macadamia nuts are all great options.
- Seeds - again you can choose whichever seeds you like. I always use pumpkin seeds (pepitas) in my granola. Sunflower seeds work well too.
- Dried fruit - my favourite is dried cranberries and I often add dried apricots too. Dates, raisins, dried mango, dried apple and sour cherries also work well. If you're looking for a cheaper alternative, then raisins are a great option.
- Shredded coconut - try to make sure it's unsweetened or your granola will be too sweet. I like shredded or flaked coconut so that you get the texture of it, rather than desiccated coconut that just gets lost among the oats.
- Honey/Maple syrup - this is where the granola gets its sweetness. My preference is a half/half mix of honey and maple syrup. I find too much honey overpowers the flavour. If you prefer to stick with just one, that's fine too.
- Coconut oil - I love the flavour coconut oil gives to this granola. But if you aren't a fan, then you can substitute with another oil - avocado, grapeseed, walnut...
- Salt - this helps to balance the sweetness of the honey/maple syrup and brings out the flavour of the nuts and seeds.
How to make Thermomix Granola
Full instructions with exact steps can be found in the recipe card at the end of this post.
Firstly, we start by weighing and chopping the nuts. (3 seconds / speed 5) Then set them aside.

Next, we weigh in the coconut oil, maple syrup and honey and melt it together. (2 minutes / 60 degrees / speed 2).


And then weigh in all the other ingredients, except the fruit and mix it all together (15 seconds / REVERSE / speed 2).

Spread the granola mixture evenly over a lined baking tray and bake for 30 minutes.


Once it's cool, we can stir through the dried fruit, and it's ready to eat!


Storage
Store the granola in an airtight jar or container at room temperature. It will keep for several weeks.

How to Serve Granola

- With Greek yoghurt and fresh berries
- Sprinkled over smoothie bowls
- With milk as a breakfast cereal
- As a topping for stewed fruit
- Eaten by the handful as a snack

Ingredients
- 100 g mixed nuts See notes
- 40 g coconut oil
- 60 g honey
- 60 g maple syrup
- ½ teaspoon salt
- 350 g rolled oats
- 50 g pumpkin seeds (pepitas)
- 50 g shredded coconut
- 100 g dried fruit chopped - see notes.
Instructions
- Pre-heat the oven to 150C / 300F
- Weight the nuts into the Thermomix bowl. Chop for 3 seconds / speed 5. Set aside for later.
- Add the coconut oil, honey, maple syrup and salt to the Thermomix bowl. Melt together for 2 minutes / 60 degrees / speed 2.
- Add the oats, nuts, pumpkin seeds, and coconut flakes to the bowl. Mix for 15 seconds / REVERSE / speed 2. Give it a quick stir with the spatula and mix again for 15 seconds / REVERSE / speed 2.
- Line a deep baking tin with baking paper, tip in granola mixture and spread out.
- Bake in oven for 30-35 minutes until golden, stirring once half way through.
- Leave to cool in the tin, then stir in chopped fruit.
- Store in an airtight container.
