    Thermomix Grissini (Breadsticks)

    Make crispy, golden Thermomix Grissini with this easy homemade breadstick recipe. Perfect for soups, cheeseboards, snacks and entertaining.

    Homemade grissini (aka breadsticks) are the perfect snack to nibble on, serve with a cheeseboard or add to the family dinner table.

    My whole family love these homemade grissini, and they never last long. They're one of those snacks where you think, "I'll just have one more," and before you know it, they're all gone.

    Forget the packet version. Homemade grissini have a delicious crisp exterior, but the inside stays soft and fresh, making them completely irresistible.

    The best part? They're so easy (and fun) to make. The Thermomix does all the hard work of kneading the dough, leaving you with the satisfying job of stretching out the breadsticks.

    Then all that's left to do is bake them... and enjoy eating them. They're delicious served with soup, on a cheeseboard or simply enjoyed warm from the oven.

    Ingredients

    You will need the following ingredients for this recipe. Exact quantities can be found in the recipe card at the bottom of this post.

    For the bread dough:

    • Instant yeast - this recipe uses instant yeast, which doesn't require sugar to activate it. This recipe calls for two teaspoons of yeast - if you have sachets, then one 7g sachet is fine.
    • Water
    • Flour - bread flour is generally considered the best flour for baking bread because of its higher protein content. This helps create gluten, which creates chewiness in bread. However, for this recipe I often just use good quality plain flour (all purpose flour) and they turn out just fine. If you have bread flour, then by all means use it.
    • Salt - this not only gives flavour to your dough, but it also strengthens it.
    • Olive Oil - mixed into the dough to help tenderise the dough and give it some extra stretchiness. Also brushed over the breadsticks before baking to help the toppings stick and create a lovely golden finish.

    Optional toppings:

    • Sesame seeds
    • Poppy seeds
    • Salt flakes
    • Infused olive oil

    How to make Thermomix Grissini (Step by Step)

    Making these breadsticks is surprisingly easy. I'm sure once you make them once, they will become a regular in your house!

    Step 1: Make the dough

    Making dough in the Thermomix is super simple and one of my favourite things about the Thermomix - it does all the hard work of kneading for you.

    To make the dough, place water and yeast in the Thermomix bowl and warm it slightly. Then just add the remaining ingredients, start the Dough function and let the Thermomix work its magic for two minutes.

    Step 2: Prove the dough

    Remove the dough from the Thermomix and transfer to a lightly oiled bowl. Cover with a damp tea towel (or cling wrap) and leave in a warm place for around 1 - 1.5 hours, until doubled in size.

    Step 3: Second Proof

    Once the dough is risen, tip it out onto a floured surface and knock the air out of it.

    Now shape it into a large, wide log shape. Then cover it with a clean tea towel and leave to prove for a further 10-15 minutes.

    You can pre-heat your oven while you are doing this.

    Step 4: Make the Grissini

    Now comes the fun part! Start by rolling out the dough into a long thin rectangle about 12-15cm wide.

    Next brush it with olive oil.

    Top tip: If you'd like to add extra flavour, infuse the olive oil with garlic and rosemary before brushing it over the dough. I often do this, just like I do for my Thermomix Focaccia.

    Then sprinkle over the sesame seeds (or poppy seeds) and salt flakes.

    Top Tip: To help the sesame seeds stick to the bread, lightly run your rolling pin over the surface of the dough to press the seeds into the dough.

    Now it's time to cut the breadsticks. I use a dough cutter for this, but a sharp knife or pizza cutter will also work.

    Cut the dough into approximately 1cm strips.

    Now take each strip and, holding each end, stretch it out until you have a long thin stick. I find it easiest to do this close over the surface of my baking tray.

    Step 5: Bake the Grissini

    Now you just need to bake them until lightly golden and crisp. They will take around 10 - 15 minutes at 200 celcius.

    In my oven, this takes around 12 minutes, but every oven is a little different.

    Storing Grissini

    Store the cooled grissini in an airtight container at room temperature for up to 3 days.

    If they lose a little of their crispness, pop them back into a hot oven for a few minutes to freshen them up.

    Ingredients

    For the dough

    • 2 tsp instant yeast (or a 7g sachet)
    • 220 g water
    • 400 g flour
    • 1 teaspoon salt
    • 30 g extra virgin olive oil

    Toppings (optional and adaptable)

    • 1 tablespoon extra virgin olive oil *see notes
    • 2 tablespoon sesame seeds (or poppy seeds)
    • 1 teaspoon salt flakes

    Instructions

    • Place yeast and water in the mixing bowl and mix 1 minute / 37 degrees / speed 1.
    • Add flour, salt, olive oil and knead 2 minutes / lid closed / knead.
    • Grease a large bowl with a little olive oil. Transfer dough to the bowl and cover with a damp tea towel or plastic wrap.
    • Find a warm spot and leave the dough to rise for 1 - 2 hours, depending on how warm your house is.
    • Once the dough is risen, tip it out onto a floured surface and knock the air out of it. Now shape it into a large, wide log shape. Then cover it with a clean tea towel and leave to prove for a further 10-15 minutes.
    • Pre-heat your oven to 200 °C/ 400 °F. Line a baking tray with baking paper.
    • Use a rolling pin to roll out the dough into a long thin rectangle approximately 12-15cm wide.
    • Use a pastry brush to brush the entire surface of the dough with the olive oil.
    • Sprinkle over the sesame seeds (or poppy seeds). Use your rolling pin to lightly press the seeds into the dough.
    • Use a dough cutter or sharp knife to cut the dough into 1cm strips.
    • Take each strip and holding it at either end, stretch the dough out into a long stick. Place each strip slightly apart onto a baking tray. (I usually get 10 breadsticks to a tray).
    • Bake in the oven for 10-15 minutes until lightly golden and crisp. Cool on a cooling rack.
    • Store in an airtight container until ready to serve.

    Notes

    Infused olive oil: If you want to add extra flavour to your Grissini, infuse the olive oil with garlic and rosemary: Measure two tablespoons of olive oil into a jar with a lid. Add crushed or finely grated garlic and some rosemary leaves. Shake the jar and set aside until ready to use.
