    Air Fryer Flatbread (Easy No-Yeast Recipe)

    This easy Air Fryer Flatbread recipe uses just 5 simple ingredients to create soft, fluffy flatbreads in minutes. No yeast required.

    These Air Fryer Flatbreads are one of those recipes that almost feels too easy to work. Made with just a handful of pantry staples, they're soft, fluffy and perfect for serving alongside curries, dips, soups or grilled meats.

    The recipe was inspired by Andy Allen's famous two-ingredient flatbread from MasterChef Australia. I've adapted it slightly to use plain flour and baking powder instead of self-raising flour, plus a little olive oil and salt for extra flavour and a softer dough.

    Cooking flatbreads in the air fryer works brilliantly. The high, evenly distributed heat helps them puff up beautifully while creating golden brown spots on the outside. Watching them inflate into little balls after a couple of minutes is half the fun.

    Best of all, there's no yeast and no waiting for dough to rise. Just mix, roll and cook. Fresh homemade flatbreads can be on the table in under an hour.

    Ingredients for Air Fryer Flatbread

    You will need the following ingredients for this recipe. Exact quantities can be found in the recipe card at the bottom of this post.

    • Plain (all-purpose) flour
    • Baking powder
    • Greek yoghurt
    • Salt
    • Olive oil

    There are three simple steps to making these air fryer flatbreads:

    • Make the dough
    • Roll out the flatbreads
    • Cook the flatbread

    Step 1: Make the dough

    To make the dough for these air fryer flatbreads, start by mixing the dry ingredients (flour, baking powder and salt).

    Add the Greek yoghurt and olive oil and mix with a wooden spoon until a shaggy dough forms. Then use your hands to bring it together into a ball.

    Knead the dough for 2 minutes and then wrap it in plastic wrap and set aside and rest it for around 30 minutes.

    Step 2: Roll out the flatbreads

    Divide the dough into 6 equal portions and roll each portion into a ball. Now use a rolling pin to roll each ball into a circle approximately 15cm (6 inches) in diameter.

    Tip: to get a nice even circle, rotate the dough a quarter turn after each roll (roll and turn, roll and turn). I sometimes cheat and start off with a tortilla press to get a perfect circle to start with.

    Step 3: Cook the flatbreads

    First, pre-heat your air fryer for 5 minutes. You want it to be nice and hot before you start. Spray the basket with olive oil.

    Take one of your flatbread dough circles, spray it on both sides with olive oil and place in the air fryer.

    After around 2 minutes, the flatbread should puff up dramatically into a balloon-like shape. This is exactly what you want.

    Flip it over and cook for a further 2 minutes until it starts to brown.

    Tip: As your air fryer gets hotter, the flatbread may take shorter to brown.

    Wrap the cooked flatbreads in a clean tea towel while you cook the remaining batches.

    Tips for Perfect Air Fryer Flatbread

    • Preheat the air fryer fully before cooking.
    • Roll the dough evenly for consistent cooking.
    • Don't overcrowd the basket.
    • Spray both sides lightly with olive oil.
    • Keep cooked flatbreads wrapped in a clean tea towel while cooking the remaining batches.

    These homemade flatbreads are incredibly versatile and can be served in lots of different ways.

    My favourite way to serve them is warm from the air fryer alongside a bowl of hummus or with my Air Fryer Chicken Souvlaki and salad for an easy weeknight dinner.

    • Alongside dips such as Hummus, tzatziki or baba ganoush
    • With Curries and casseroles
    • Dipped in Soups and stews
    • Served with Grilled meats such as chicken souvlaki or lamb
    • With Falafel and salads
    • As a wrap for lunch fillings
    • As Homemade pizza bases
    • With Cheese and antipasto platters

    Storage & Freezing

    How to Store Air Fryer Flatbread

    Store the cooled flatbreads in an airtight container at room temperature for up to 2 days.

    For longer storage, keep them in the fridge for up to 5 days. Reheat briefly in the air fryer, oven or microwave before serving.

    Can You Freeze Flatbread?

    Yes. These flatbreads freeze really well.

    Allow them to cool completely, then place a piece of baking paper between each flatbread and store in a freezer-safe bag or container for up to 3 months.

    Thaw at room temperature and warm in the air fryer for 1-2 minutes before serving.

    Why did my flatbread puff up like a balloon?

    This is completely normal and exactly what you want. The high heat creates steam inside the dough, causing the flatbread to inflate. Once removed from the air fryer it will naturally deflate as it cools.

    Why didn't my flatbread puff up?

    The air fryer may not have been fully preheated, or the dough may have been rolled too thick or unevenly. Don't worry if it doesn't puff completely. It will still taste delicious.

    Can I make the dough ahead of time?

    Yes. The dough can be made up to 24 hours ahead and stored covered in the fridge. Let it sit at room temperature for around 20 minutes before rolling and cooking.

    Can I use self-raising flour instead?

    Yes. If using self-raising flour, simply omit the baking powder.

    Can I use regular yoghurt instead of Greek yoghurt?

    Greek yoghurt works best because it is thicker and contains less moisture. If using regular yoghurt, you may need to add a little extra flour to achieve a soft, workable dough.

    Can I make these without an air fryer?

    Yes. Cook them in a hot frying pan or cast-iron skillet for 2-3 minutes per side until puffed and lightly browned.

    Can I add flavours to the dough?

    Absolutely. Try adding garlic powder, dried herbs, nigella seeds, za'atar or grated parmesan to the dough for extra flavour.

    Ingredients

    • 1.5 cups plain flour (all purpose flour)
    • 2 teaspoon baking powder
    • 1 tsp salt
    • ¾ cup Greek yoghurt
    • 1 tablespoon olive oil
    • olive oil spray for cooking

    Instructions

    • Add the flour, baking powder and salt to a large bowl and mix well.
    • Add the yoghurt and olive oil to the bowl. Use a wooden spoon to combine until a rough dough forms then use your hands to bring it all together.
    • Knead the dough for around 2 minutes. Wrap in plastic wrap and set aside for 30 minutes to rest.
    • Divide the dough into 6 equal portions. Roll each portion into a ball.
    • Take each ball of dough and use a rolling pin to roll out into a circle of around 6 inches (15cm) in diameter.
      Tip: turn the dough a quarter turn after each roll to get a nice even circle. Roll and turn, roll and turn.
    • Pre-heat the air fryer to 200 C (400 F) for around 5 minutes (you want it to be hot before you start). Spray the basket with olive oil.
    • Take one of the dough circles, spray it on both sides with olive oil spray and then place in the air fryer basket.
    • After 2 minutes, the flatbread should puff up dramatically into a balloon-like shape.
      Flip it over and cook for a further 2 minutes until it starts to brown (as your air fryer gets hotter it may take less than 2 minutes).
    • Repeat with the remaining flatbreads. Rest the cooked flatbreads in a clean tea towel while you cook the remaining.
