    This Thermomix Broccoli Salad is a tasty blend of vegetables, seeds, nuts and dried fruit, making it healthy and delicious.

    This is one of my favourite salads and it is so simple to throw together thanks to the Thermomix.

    I love how all the different ingredients, including nuts, seeds and dried fruit, add a load of different flavours and textures to this salad. It makes it interesting, healthy AND delicious!

    I love to serve this alongside grilled chicken or salmon for a healthy lunch or dinner, or add it to a summer lunch table at a BBQ with friends.

    Ingredients & Substitutions

    A full list of ingredients and quantities can be found in the recipe card at the bottom of the post.

    • Broccoli
    • Red onion
    • Mayonnaise or Greek yoghurt - this is personal preference, depending on which flavour you prefer and whether you are going for a healthier option.
    • Apple cider vinegar - can substitute with lemon juice
    • Sugar - the sweetness of the sugar works really well with the sourness of the vinegar. Don't like the idea of adding sugar to your salad? Substitute it with maple syrup.
    • Dried cranberries - I love the sweet tartness of dried cranberries but you could substitute with raisins or other dried fruit depending on your preference.
    • Pumpkin seeds - these add a lovely crunch to the salad. You can substitute with sunflower seeds or other seeds or nuts.
    • Flaked almonds - can substitute with any other nuts, such as hazelnuts, pecans, walnuts etc.

    How to make Broccoli Salad in the Thermomix

    This Thermomix salad takes just around 5 minutes to make. You really just need to throw everything into the bowl and let the Thermomix do all the hard work.

    Full step-by-step instructions with exact timings can be found in the recipe card at the bottom of the post.

    Start by adding the broccoli, red onion, mayonnaise or Greek yoghurt, apple cider vinegar and sugar to the bowl, then chop for 5 seconds at speed 4.

    Next, season it with some salt and pepper before mixing again for 3 more seconds.

    Finally, add the dried cranberries, pumpkin seeds and flaked almonds to the bowl and mix on REVERSE for 4 more seconds.

    And your salad is ready to serve!

    Ingredients

    • 500 g broccoli
    • ¼ red onion
    • 100 g mayonnaise or Greek yoghurt
    • 20 g apple cider vinegar
    • 10 g sugar
    • 30 g dried cranberries
    • 20 g flaked almonds
    • 20 g pumpkin seeds

    Instructions

    • Add the broccoli, red onion, mayonnaise or Greek yoghurt, apple cider vinegar and sugar to the Thermomix bowl. Chop for 5 seconds / speed 4.
    • Scrape down the bowl. Add salt & pepper to taste. Chop for 3 seconds / speed 4.
    • Add the cranberries, pumpkin seeds and almonds to the bowl and mix for 5 seconds / REVERSE / speed 3.

    Notes

    1. The nutrition information for this recipe is calculated for using low-fat mayonnaise. 
    2. Whether you choose to use mayonnaise or Greek yoghurt is based on personal preference.
    3. Apple cider vinegar can be replaced with lemon juice. 
    4. You can make this salad your own by switching up the fruits, nuts and seeds. Other good options include raisins in place of cranberries, sunflower seeds in place of pumpkin seeds and chopped walnuts or hazelnuts in place of flaked almonds. 
    5. The sweetness of the sugar works really well with the sourness of the vinegar. Don't like the idea of adding sugar to your salad? Substitute it with maple syrup.
