Thermomix Passion Fruit Mousse

For the Mousse
- 160 g passion fruit juice From 8-9 large passion fruits
- 300 g condensed milk
- 300 g thickened cream suitable for whipping
For the passion fruit coulis
- 100 g passion fruit pulp 3-4 large passion fruits
- 40 g sugar
- 2 teaspoon lemon juice
To make the Mousse
First, prepare the passion fruit juice: Scoop out the pulp from the passionfruit and use a spoon to pass it through a fine mesh sieve. Set aside.
Next, whip the cream: Insert the butterfly into the Thermomix bowl. Turn to Speed 3 with the MC off for approximately 1 - 2 minutes. Watch carefully through the hole in the lid from 30 seconds onwards and watch/listen for the change in consistency. You want the cream to be thick and fluffy.Set aside. Add the passion fruit juice and the condensed milk to the bowl. Mix for 20 seconds / speed 4.
Add the whipped cream and mix for 15 seconds / speed 3.
Spoon the mixture into cups or jars and place in the fridge to chill for a minimum of 2 hours or overnight.
For the Passion fruit coulis
Add the sugar to the Thermomix bowl. Mill for 10 seconds / speed 9.
Add the passion fruit pulp and lemon juice. Mix/heat for 6 minutes / 90 degrees / speed 2.
Transfer to a jug or bowl and refrigerate until ready to serve.
