    Thermomix Passion Fruit Mousse

    This Thermomix Passion Fruit Mousse (Brazilian Mousse de Maracuja) is creamy, sweet, slightly tangy and definitely delicious. It's the perfect simple make-ahead dessert.

    This is my adaptation of the famous Brazilian dessert Mousse de Maracuja.

    It is more of a creamy texture, and less light and airy than a typical European mousse.

    The tartness of the passionfruit works perfectly to cut through all that creaminess, leaving you with an insanely delicious mouthful of tropical goodness.

    Best of all, it's super easy to make in the Thermomix and you can make it ahead of time, making it a perfect dinner party dessert.

    This recipe uses the following ingredients - exact quantities can be found in the recipe card at the bottom of the post.

    For the Mousse

    The passion fruit mousse uses just 3 ingredients:

    • Passion fruit juice - I always make this by sieving fresh passion fruit pulp from fresh fruit. You can also buy passion fruit pulp, either canned or frozen. If you are going to buy passion fruit juice - make sure you get unsweetened passion fruit concentrate, not a juice that has been watered down or sweetened.
    • Sweetened Condensed Milk - make sure you get the thick syrupy condensed milk and not evaporated milk!
    • Thickened Cream - make sure you choose a cream that is suitable for whipping.

    For the Passion Fruit Sauce

    The passion fruit sauce also uses just 3 ingredients:

    • Passion fruit pulp - as above, I like to use fresh passion fruit pulp from fresh fruit. You can also buy passion fruit pulp, either canned or frozen. There is no need to sieve it for the coulis - we want the seeds to add texture and make it look pretty!
    • Sugar - any white sugar will do.
    • Lemon juice - again, I prefer to squeeze my own juice, but you can also use bottled juice.

    How to make Passion Fruit Mousse in the Thermomix

    This Thermomix Mousse is very quick and easy to make. In fact the most time-consuming element is sieving the passion fruit.

    The only thing to note is that it does take a minimum of 2 hours to chill in the fridge, so you do need to be organised ahead of time.

    Step 1: Sieve the passion fruit

    Cut open the passionfruit and scoop out the pulp. Then press the pulp through a fine mesh sieve.

    Keep stirring it around with a spoon until you have just the seeds left behind in the sieve and the juice in the bowl. Discard the seeds.

    Step 2: Make the Mousse

    Start by whipping the cream with the butterfly attachment. This needs you to keep a close eye on it to make sure it doesn't split.

    Set the speed to 3 and keep the measuring cup so you can watch through the lid. You want the cream to be thick and fluffy.

    It will take around 1.30 - 2 minutes, depending on how cold the cream is. You will notice the consistency changing and will hear the change too.

    Set the cream aside until later.

    Next, add the passion fruit juice and condensed milk to the bowl and mix together.

    Then return the whipped cream and mix together.

    Now, spoon the mousse into jars or bowls and transfer to the fridge to chill for a minimum 2 hours, or overnight.

    Step 3: Make the Passion Fruit Topping

    While the mousse is chilling in the fridge, you can make the passion fruit coulis.

    This can also be kept in the fridge for several days once it is made, so can be made ahead of time.

    To make the coulis, first mill the sugar. Then add the passion fruit pulp (no need to sieve it this time) and lemon juice and mix/heat it for 6 minutes.

    Transfer it to a jug or jar and keep in the fridge until needed.

    Step 4: Serve!

    To serve the mousse, scoop a tablespoon of the coulis over the top.

    Tip: Got leftover sauce? It's amazing scooped over vanilla ice cream, mango sorbet or cheesecake! I also use it on my Thermomix Mango Parfait.

    Ingredients

    For the Mousse

    • 160 g passion fruit juice From 8-9 large passion fruits
    • 300 g condensed milk
    • 300 g thickened cream suitable for whipping

    For the passion fruit coulis

    • 100 g passion fruit pulp 3-4 large passion fruits
    • 40 g sugar
    • 2 teaspoon lemon juice

    Instructions

    To make the Mousse

    • First, prepare the passion fruit juice: Scoop out the pulp from the passionfruit and use a spoon to pass it through a fine mesh sieve. Set aside.
    • Next, whip the cream: Insert the butterfly into the Thermomix bowl. Turn to Speed 3 with the MC off for approximately 1 - 2 minutes. Watch carefully through the hole in the lid from 30 seconds onwards and watch/listen for the change in consistency. You want the cream to be thick and fluffy.
      Set aside.
    • Add the passion fruit juice and the condensed milk to the bowl. Mix for 20 seconds / speed 4.
    • Add the whipped cream and mix for 15 seconds / speed 3.
    • Spoon the mixture into cups or jars and place in the fridge to chill for a minimum of 2 hours or overnight.

    For the Passion fruit coulis

    • Add the sugar to the Thermomix bowl. Mill for 10 seconds / speed 9.
    • Add the passion fruit pulp and lemon juice. Mix/heat for 6 minutes / 90 degrees / speed 2.
    • Transfer to a jug or bowl and refrigerate until ready to serve.

    To serve

    • Spoon 1-2 tablespoons of passion fruit coulis over the top of each mousse bowl to serve.
