    This Thermomix Vegetable Puree is ideal for first baby foods or can be used to sneak extra veggies into other dishes.

    A lot of people I talk to first decided to get a Thermomix for making baby food. And I can see why.

    Making puree in the Thermomix is quick and easy and means just one appliance to wash up. You are going to find it such a time saver.

    Pureed fruit and vegetables are often people's go-to for first baby foods. The good thing about making puree in the Thermomix, is that you steam the vegetables first in the simmering basket, meaning you retain more of the nutrients.

    This recipe is based on plain pureed vegetables, making it suitable for baby food.

    If you are planning to serve pureed vegetables as an alternative to Thermomix Mashed Potato or to mix in with other dishes, then I would recommend adding in other ingredients such as salt, pepper, butter and/or herbs to give it more flavour.

    Making vegetable puree in the Thermomix

    Making vegetable puree in the Thermomix is so quick and easy. In this recipe, I use sweet potato and cauliflower to make two different purees.

    Chopped sweet potato and cauliflower.

    The only difference between the two purees is that the cauliflower takes slightly less time to cook. There's not much difference, as much of the cooking time is actually bringing the water to boiling/steaming point.

    How long the vegetables take to cook will also depend on how large you chop them. Always check that they are soft before pureeing. If you think they are not soft enough - just add another 5 minutes of cooking time.

    • 20 minutes - I do this time for sweet potato, carrots, parsnips, swede and pumpkin.
    • 15 minutes - I do this time for cauliflower, broccoli, zucchini, green beans and red pepper.

    You can easily adapt this puree recipe to any type of fruit or vegetable that you have.

    How to make Thermomix Veg Puree

    This recipe uses the simmering basket. This is the basket that sits inside the Thermomix bowl.

    Although it is called a simmering basket, you are actually going to steam the vegetables in the basket, as the water level remains below the basket.

    Fill the Thermomix bowl to the 500ml mark (or measure in 500g of water).

    Insert the simmering basket and weigh in the chopped vegetables. Try to ensure your vegetables are chopped into evenly sized pieces.

    Then set the Thermomix to 15 or 20 minutes / Varoma / speed 1. The Varoma temperature creates steam to steam the vegetables.

    Then remove the simmering basket (use the Thermomix spatula as a handle to the simmering basket to avoid burning yourself) and discard the water.

    Return the vegetables directly into the Thermomix bowl (set the simmering basket aside) and blend.

    Freezing Vegetable Puree

    This recipe is great for batch making and freezing. I suggest using ice trays to freeze the puree into portions, and then transferring to a ziploc bag once frozen.

    This way, you can quickly and easily grab a portion when you need it. It also makes it easy to mix and match purees this way.

    Equipment

    • Simmering Basket
    • Spatula

    Ingredients

    • 500 g sweet potato see notes
    • 500 g water

    Instructions

    • Add the water to the Thermomix bowl and insert the simmering basket.
    • Chop the sweet potato into small cubes (approximately 2cm).
    • Weight the sweet potato into the simmering basket.
    • Cook for 20 minutes / Varoma / speed 1.
    • Use the Thermomix spatula as a handle to remove the simmering basket from the Thermomix bowl. Discard the water from the bowl.
    • Place the sweet potato directly into the Thermomix bowl and set aside the simmering basket.
    • Blend for 20 seconds / speed 5. Scrape down the bowl.
    • Blend for 20 seconds / speed 8. Check that the puree is nice and smooth. If required you can continue blending until smooth.

    Notes

    This recipe can be adapted for a multitude of vegetables (and fruit). The process is the same, but the timing may be different: 
      • 20 minutes - I do this time for sweet potato, carrots, parsnips, swede and pumpkin.
