Thermomix Vegetable Puree
This Thermomix Vegetable Puree is ideal for first baby foods or can be used to sneak extra veggies into other dishes.

- 500 g sweet potato see notes
- 500 g water
Add the water to the Thermomix bowl and insert the simmering basket.
Chop the sweet potato into small cubes (approximately 2cm).
Weight the sweet potato into the simmering basket.
Cook for 20 minutes / Varoma / speed 1.
Use the Thermomix spatula as a handle to remove the simmering basket from the Thermomix bowl. Discard the water from the bowl.
Place the sweet potato directly into the Thermomix bowl and set aside the simmering basket.
Blend for 20 seconds / speed 5. Scrape down the bowl.
Blend for 20 seconds / speed 8. Check that the puree is nice and smooth. If required you can continue blending until smooth.
This recipe can be adapted for a multitude of vegetables (and fruit). The process is the same, but the timing may be different:

- 20 minutes - I do this time for sweet potato, carrots, parsnips, swede and pumpkin.

- 15 minutes - I do this time for cauliflower, broccoli, zucchini, green beans and red pepper.
How long the vegetables take to cook will also depend on how large you chop them. Always check that they are soft before pureeing.
If you think they are not soft enough - just add another 5 minutes of cooking time.
