- 1 onion
- 2 cloves garlic
- 300 g mixed vegetables roughly chopped (see notes)
- small handful fresh parsley
- 300 g potatoes peeled and diced into 2cm pieces.
- 20 g olive oil
- 700 g stock (see notes)
Add the onions, garlic, mixed vegetables and parsley to the Thermomix bowl. Chop for 5 seconds / speed 6.
Add the diced potatoes and the olive oil. Saute for 5 minutes / 100 degrees / speed 2.
Add the stock, season with salt & pepper and cook for 20 minutes / 100 degrees / speed 1.
Blend for 1 minute / speed 9.
Serve while piping hot.
- Mixed vegetables - the beauty of this soup recipe is that it is extremely versatile based on what vegetables you like, or happen to have in your fridge. Bear in mind that the flavour of the soup comes from the vegetables, so your choice will affect the outcome. Sweeter vegetables such as pumpkin or red pepper will produce a sweeter soup than vegetables such as broccoli or celery, for example.
- Stock - I like to use my homemade vegetable stock paste for this recipe, diluted with 700g of water. You can use any stock you like - a bone broth or a stock-bought option. Bear in mind that the better the quality of your stock, the better the soup will be.
- Other things to add - you can make this stock your own by adding any other ingredients, such as herbs and spices, a squeeze of fresh lemon juice or a dollop of cream.
