This Thermomix Vegetable Soup recipe is quick and easy and extremely versatile, allowing you to change it up based on your favourite vegetables or what you have in your fridge.
I don't know about you, buy I often have a vegetable drawer full of leftover veggies - a couple of carrots, a bit of leftover pumpkin, maybe a few sticks of celery.
That's where this soup comes in! It's a great way to use up all those veggies and create a warming, comforting soup.

This vegetable soup uses the following ingredients. You can find exact quantities in the recipe card at the bottom of the post.
- Onion
- Garlic
- Mixed vegetables - the beauty of this soup recipe is that it is extremely versatile based on what vegetables you like, or happen to have in your fridge. Bear in mind that the flavour of the soup comes from the vegetables, so your choice will affect the outcome. Sweeter vegetables such as pumpkin or red pepper will produce a sweeter soup than vegetables such as broccoli or celery, for example.
- Fresh Parsley - you could also add any other herbs or spices you have to liven up your soup, based on personal taste.
- Potatoes - potatoes help add a nice creamy finish to the soup and they also absorb the flavours around them.
- Olive Oil - you can substitute with vegetable oil or butter if you prefer.
- Stock - You can use any stock you like for this. I usually use my homemade Thermomix vegetable stock paste diluted with water. You could also use a homemade bone broth or a shop-bought stock. Remember! The better the quality of stock, the better your soup will taste.
How to make Vegetable Soup in the Thermomix
Making veggie soup in the Thermomix is very quick and easy. There is a little preparation involved with roughly chopping the vegetables, but the rest is all done by the Thermomix.

Step 1: Preparation
Start by roughly chopping the vegetables (these will be further chopped in the Thermomix so no need to make them even) and dicing the potatoes into roughly 2cm pieces.
Step 2: Making the Soup
Start by chopping the onions, garlic, vegetables and parsley.
Then add the potatoes and oil and saute for 5 minutes.
Next you add the stock, season with salt & pepper and allow it to cook away for 20 minutes.
Once this has finished, you just blend it for one minute to make it smooth and creamy. Then serve while still piping hot.
Other things you can add to vegetable soup
As I have said, this is a very versatile soup and you can play around with adding different ingredients based on your personal taste and preferences. Here are a few ideas to try:
- Herbs - You can add depth of flavour by adding any choice of herbs. Fresh thyme, rosemary, bay leaves, tarragon are all popular choices.
- Spices - Try adding cumin, coriander, cinnamon or allspice to your soup.
- Freshly squeezed lemon - A good squeeze of lemon right before you blend the soup can help brighten up a soup if the vegetables you have chosen lack a bit of flavour.
- Apple Cider Vinegar - no lemon? You can also try adding a splash of vinegar to lift the soup.
- Cream or yoghurt - you can make it extra creamy by adding these before you blend the soup, or add a swirl on top to serve.
- Grated parmesan - again, parmesan can help bring out the flavour of a soup. It is also nice grated on top before serving.

FAQs and Top Tips
Yes you can freeze this vegetable soup. It freezes well and will last for up to 6 months in the freezer. And because there is no milk or cream in it, it is easy to re-heat without worrying about it curdling.
I recommend portioning out your soup prior to freezing it. Portion it into 1 or 2-portion serving sizes, pour into an airtight container and store in the freezer. This gives you quick grab-and-go meals when you need them.
Ideally, you should let the soup defrost overnight in the fridge before reheating. However, you can also defrost it in the microwave. Then you can either reheat it in the microwave, or use the Thermomix to reheat it.

Thermomix Vegetable Soup
Ingredients
- 1 onion
- 2 cloves garlic
- 300 g mixed vegetables roughly chopped (see notes)
- small handful fresh parsley
- 300 g potatoes peeled and diced into 2cm pieces.
- 20 g olive oil
- 700 g stock (see notes)
Instructions
- Add the onions, garlic, mixed vegetables and parsley to the Thermomix bowl. Chop for 5 seconds / speed 6.
- Add the diced potatoes and the olive oil. Saute for 5 minutes / 100 degrees / speed 2.
- Add the stock, season with salt & pepper and cook for 20 minutes / 100 degrees / speed 1.
- Blend for 1 minute / speed 9.
- Serve while piping hot.
