    This Thermomix Chicken Soup is filled with vegetables and wonderful flavors that will warm your soul on a cold day.

    I make this chicken soup in the Thermomix all the time. It is quick and easy and oh so comforting. Just like Grandma would make!

    Loaded up with vegetables it is not only good for the soul but good for your body too! Add in a dose of homemade bone broth and you are onto a real winner!

    Serve it in large bowls with a sprinkle of parsley and a side of crusty bread... or just enjoy it on its own.

    Chicken Soup Ingredients

    The beauty of a soup is that you can kind of make it up as you go, and this Thermomix soup is no exception.

    You can use the list of ingredients loosely and toss in whatever you happen to have.

    We list onion, carrot, celery and red bell pepper as the vegetables. I have chosen the carrot and red pepper as they add a wonderful sweetness, but feel free to substitute these for any other vegetables you like.

    For the chicken stock, I usually use our homemade chicken bone broth as it gives a wonderful flavor and is jam packed with nutrients. Alternatively I will use Thermomix stock paste mixed with water. You can substitute this for any stock you have - store bought or stock cube.

    For chicken I use chicken breasts but you could also use boneless thighs if that is what you have.

    How to make this Thermomix Chicken and Vegetable Soup

    Making this Thermomix soup recipe is super easy.

    First you add the vegetables to the Thermomix bowl and chop them up.

    Next you add the butter and saute them for 5 minutes, while you dice up the chicken breast. Add the chicken to the bowl with the flour and mix it up.

    Then add in the stock and let it all cook for 15 minutes.

    And you're done! I told you it was easy!

    Ingredients

    • 1 carrot peeled and quartered
    • 1 onion peeled and quartered
    • ½ red bell pepper core and seeds removed and quartered
    • 1 stick celery quartered
    • small handful parsley leaves
    • 50 g butter
    • 500 g chicken breasts
    • 50 g plain flour
    • 800 g chicken stock

    Instructions

    • Add the carrot, onion, red bell pepper, celery and parsley to the Thermomix bowl. Chop 5 seconds / speed 6.
    • Add butter. Cook 5 minutes / 100 degrees / speed 2.
    • Meanwhile, dice chicken breast into 2cm cubes.
    • Add chicken and flour to the Thermomix bowl. Cook 1 minute / 100 degrees / speed 2.
    • Add stock. Cook 15 minutes / 100 degrees / speed 1.
    • Divide into bowls and serve.

    Notes

    If using Thermomix Stock Paste, use 2 teaspoons plus 800g water in place of the chicken stock.
    If using the TM6 measuring cup (MC), when cooking at temperatures over 95 degrees, Thermomix recommends using the simmering basket on the lid in place of the MC.
