Ingredients

  • 300 g Heavy cream Also suitable for 200-600g.

Instructions

  • Insert the butterfly into the Thermomix bowl.
  • Pour the cream into the Thermomix bowl.
  • Turn to Speed 3 with the MC off for approximately 1.30 - 2 minutes. Watch carefully through the hole in the lid from 30 seconds onwards and watch/listen for the change in consistency.

Notes

  1. For best results, make sure you use chilled cream - straight from the fridge.
  2. Make sure you use the right type of cream - this means whipping cream or double cream (thickened cream). Not single cream.
  3. Keep a close eye on the cream while it is whipping. Keep the measuring cup off and watch through the hole in the lid. You will notice the consistency changing and will hear the change too.
  4. Make sure the butterfly attachment is inserted correctly. Give it a little tug to check it is in place.
  5. Don't whip over speed 3.
  6. Don't add more than 600g of cream at a time. If the recipe calls for more, do it in batches.
  7. Avoid over whipping! If in doubt, stop the machine, check it, and then continue whipping for a few more seconds until it is done.
