This homemade cornflake chicken nuggets recipe is perfect for a quick and easy midweek kids dinner.
Made with chicken breast and baked not fried, these homemade chicken nuggets are great healthy alternative to shop-bought ones and are very simple and quick to make.
We always have a big box of Cornflakes on the go in our house, so I know I will always have them available for these homemade cornflake chicken tenders.
Adding parmesan to the mixture adds lots of flavor and also helps them get that nice browned color.
I often cook up some extra of these and then put the cold nuggets in my kids lunchboxes the next day.

Making the crumbs for baked Cornflake chicken
There are several ways you can make the crumbs. If you have a food processor, then just whizz them up in there. For a crunchier texture to your Cornflake breaded chicken, leave the crumbs larger.
If you have a Thermomix, I usually crush the Cornflakes on Speed 6 for 5 seconds for quite a fine crumb, as seen in the pictures here. (I grate the Parmesan for 10 seconds on speed 9).
Seasoning for homemade nuggets
In this recipe for chicken nuggets I have just added salt and pepper to the flour to give a bit of seasoning. The parmesan also adds flavor.
However there are lots of other things you could add to the flour or cornflake mixture. Some ideas include:
- Garlic Salt
- Onion powder
- Dried herbs - rosemary, basil, oregano, parsley
- Paprika
- A pinch of cayenne pepper
Making the chicken nuggets
When I make these chicken nuggets, I use three bowls: one with seasoned flour, one with whisked eggs and the third with the cornflake and parmesan mixture.
To make the nuggets, first coat the chicken in the flour, then dip it in the egg, then coat with breadcrumbs. If you don't like getting your hands dirty, you can also put the breadcrumb mixture in a ziplock bag and coat them that way.
Then lay them on a baking sheet lined with baking paper then pop them in the oven for 20 minutes at 200C/400F. So simple!
Kids also love joining in with this one - so if you have any budding chefs in the house, get them involved!
How to freeze homemade chicken nuggets
You can make up a big batch of these and then freeze them until needed. This makes a super quick meal for another night.
To freeze them I place the raw chicken nuggets on the baking tray in the freezer. Once they are frozen, I transfer them to a freezer bag.
To reheat, you can cook them in the oven them directly from frozen for around 20 minutes.

Cornflake Chicken Nuggets
Equipment
- Non-Stick Baking Pan
Ingredients
- 40 g parmesan finely grated
- 60 g cornflakes finely crushed
- 500 g chicken breast or tenderloin
- 2 eggs
- 50 g all purpose flour
- salt & pepper to season
Instructions
- Preheat oven to 200C/400F
- Mix together parmesan and cornflakes in a bowl.
- Add flour to another bowl and season with salt & pepper.
- Whisk eggs into a third bowl.
- Cut chicken into desired size.
- Dip each chicken piece first in the flour, then egg, then cornflake mixture and place onto baking tray lined with baking paper.
- Bake in oven for 20 minutes at 200C/400F.
