Thermomix Chocolate Cupcakes

This Thermomix Chocolate Cupcakes recipe is quick, easy and no-fail. It's the perfect recipe for when you need homemade chocolate cupcakes in a hurry.

This is my go-to chocolate cupcake Thermomix recipe. There's nothing fancy about it, but it is failsafe and gives you light fluffy moist cupcakes every time.

These easy chocolate cupcakes are also great for baking with kids. It is my daughter's number one recipe when she is baking alone. She has even perfected frosting them with buttercream.

And she's only nine years old, so if she can do it - you can too!

Tips for making the best Chocolate Cupcakes

This really is a super simple recipe and you shouldn't run into any difficulties. However, here are a few top tips to help make sure they are a success.

  • Make sure you pre-heat the oven and get your cupcake tin ready before you start. Making cupcakes in the Thermomix is so quick and this way your cake batter won't be sitting around waiting once it's ready.
  • Make sure your eggs and butter are at room temperature before you start.
  • Use an ice cream scoop to measure the cake batter into the muffin tin. This not only makes it quicker and easier, but it ensures your cupcakes are all equal in size.
  • Leave the cupcakes in the muffin tin for a just a couple of minutes before transferring them to a wire cooling rack.
  • Make sure the cupcakes are completely cool before icing them.

Frosting for Chocolate Cupcakes

I love vanilla buttercream as icing for chocolate cupcakes. The recipe included here is our Thermomix Buttercream Icing and it is rich, fluffy and delicious and just perfect for piping onto cupcakes.

Don't be tempted to buy shop bought frosting. Making it yourself tastes so much better, and it really is so easy to make buttercream in the Thermomix.

Thermomix Chocolate Icing

To make the most delicious Thermomix Chocolate Buttercream Icing, use the following ingredients:

  • 370g icing sugar
  • 225g butter
  • 60g cocoa powder
  • 70g milk
  • 1 tsp vanilla extract

First, blitz the icing sugar for 10 seconds on speed 9 to make sure it is well sifted, and set aside. Then whip up the butter for 30 seconds on speed 5 before adding in all the remaining ingredients and mixing for a further 30 seconds on speed 5. Done.

Tips for Icing Cupcakes

To make icing these delicious chocolate cupcakes easier, I highly recommend using a LARGE icing tip. It makes life so much easier.

I swear by the Wilton 1M (open star) and the Wilton 1A (round tip) for making it super easy to pipe on frosting.

Then start with your tip towards the outside edge of the cupcake and move inwards in a circular motion, moving upwards. Don't worry if you are new to piping icing, with one of these two recommended piping tips, will get the hang of it in no time.

Thermomix Chocolate Cupcakes

This Thermomix Chocolate Cupcakes recipe is quick, easy and no-fail. Perfect for when you need homemade chocolate cupcakes in a hurry.

Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 150g soft brown sugar
  • 150g butter
  • 1 tsp vanilla extract
  • 3 eggs
  • 45g milk
  • 100g plain flour
  • 2tsp baking powder
  • 40g cocoa powder

Buttercream Icing

  • 430g icing sugar
  • 225g butter
  • 70g milk
  • 1 tsp vanilla extract
  • Few drops food coloring (optional)

Instructions

  1. Pre-heat the oven to 180C / 360F. Line a muffin tray with cupcake cases.
  2. Add sugar to the Thermomix bowl. Mill for 10 seconds / speed 9.
  3. Add butter and vanilla extract to the bowl. Cream together for 20 seconds / speed 4.
  4. Add the eggs, milk, flour, baking powder and cocoa powder. Mix for 20 seconds / speed 5.
  5. Use an ice cream scoop to divide the mixture into the prepared muffin tin.
  6. Bake in the oven for 20 minutes, or until a skewer comes away clean when inserted into the middle of a cupcake.
  7. Allow to cool for a couple of minutes before transferring to a cooling rack to completely cool before icing.

For the Buttercream Icing

  1. Add icing sugar to Thermomix bowl. Mill for 10 seconds / speed 9. Set aside.
  2. Add butter to the Thermomix bowl. Mix to soften for 10 seconds / speed 5.
  3. Add milk, vanilla extract, icing sugar and food coloring (if using). Mix for 30 seconds / speed 5.
  4. Transfer to a piping bag for icing cupcakes.
