    Thermomix Chocolate Apricot Energy Bites

    These Thermomix Chocolate Apricot Energy Bites are an easy no-bake snack made with almonds, apricots, coconut and dark chocolate. Perfect for lunch boxes.

    These Chocolate Apricot Energy Bites are one of my favourite make-ahead snacks when I want something sweet without reaching for biscuits or chocolate bars.

    Made with almonds, dried apricots and coconut, they're naturally sweet, satisfyingly chewy and topped with a layer of dark chocolate that makes them feel like a real treat.

    They're also incredibly easy to make in the Thermomix. Everything is blended together in minutes, pressed into a mould and chilled until firm.

    I like making a batch at the start of the week and keeping them in the fridge for lunch boxes, afternoon snacks or those moments when I'm craving something sweet with a cup of tea. They also freeze really well, making them perfect for batch cooking.

    While I make these as chocolate-topped bites, I'll also show you how to turn the same mixture into apricot bliss balls if that's more your style.

    For this recipe I use these silicone ice cube trays and find them to be the perfect size for making bites. The silicone also makes them very easy to 'pop out' the bites.

    Ingredients You'll Need

    You will need the following ingredients for this recipe. Exact quantities can be found in the recipe card at the bottom of this post.

    The beauty of these energy bites is that they're made with just a handful of simple ingredients, most of which you may already have in your pantry.

    • Raw almonds - provide the structure of the bites and add a lovely nutty flavour. They're blended into a coarse almond meal, which helps hold everything together.
    • Dried apricots - provide most of the sweetness and create the soft, chewy texture that makes these bites so satisfying.
    • Desiccated coconut - adds texture and flavour while helping absorb moisture from the apricots.
    • Maple syrup - adds a little extra sweetness and helps bind the mixture together. If your apricots are already very sweet, you can leave it out.
    • 70% Dark Chocolate - adds a rich chocolate layer that turns these from a healthy snack into something that feels a bit more special.
    • Coconut oil - this is optional but will help make the chocolate layer smooth and creamy.

    How to Make these Energy Bites in the Thermomix

    Full instructions with exact steps can be found in the recipe card at the end of this post.

    First up, turn the almonds into almond meal by chopping them finely.

    Then add the apricots, coconut and maple syrup (if using) and blend it all together for a minute until it is soft and sticky.

    The mixture should hold together when pressed between your fingers. If it's not there yet, blend for a bit longer.

    Next, press around 1 ½ tablespoons of mixture into each compartment of an ice cube tray. A silicon ice cube tray will make it easier to pop the bites out later.

    I have these silicon ice cube trays and find them to be the perfect size for making bites.

    Now put the trays in the fridge to chill while you clean the bowl and melt the chocolate.

    To melt the chocolate, start by chopping it up, then add the coconut oil and melt it all together for four minutes.

    Once melted, remove the trays from the fridge and spoon over around 1 ½ teaspoons of chocolate onto each energy bite. Tilt the tray to ensure the chocolate coats each compartment evenly.

    A small sprinkle of extra coconut over the chocolate before chilling also helps them look pretty.

    Refrigerate for at least 30 minutes or until ready to eat.

    Chocolate Apricot Bliss Ball Variation

    If you prefer a version without chocolate, then it's easy to turn these energy bites into bliss balls.

    Instead of pressing the mixture into an ice cube tray and topping with chocolate, roll it into small balls and coat them in desiccated coconut.

    This creates a delicious apricot bliss ball version that's perfect for lunch boxes and snacks on the go.

    Storage

    Store these Chocolate Apricot Energy Bites in an airtight container in the fridge for up to 7 days.

    They also freeze really well and will keep for up to 3 months, making them perfect for batch making. Simply thaw a few in the fridge whenever you need a quick snack.

    Variations

    It's easy to play around with this recipe and make different variations. Here are some ideas to get you started:

    • Add chia seeds.
    • Add hemp seeds.
    • Swap the apricots for Medjool dates to make a chocolate date energy bite variation.
    • Add orange zest.
    • Swap dark chocolate for white chocolate.

    Frequently Asked Questions

    Can I make these without a Thermomix?

    Yes, these can also be made in a normal food processor. Blend the almonds (or use almond meal), then add the remaining ingredients and process until the mixture becomes sticky and holds together.

    Can I use other dried fruit?

    Yes. Dried mango, dates or dried figs would all work well.

    Can I use almond meal instead of whole almonds?

    Yes. Substitute the almonds with almond meal and skip the first chopping step.

    Are these energy bites freezer-friendly?

    Yes. Freeze in an airtight container for up to 3 months and thaw in the fridge before eating.

    Equipment

    • Silicon ice cube tray

    Ingredients

    • 150 g raw almonds
    • 200 g dried apricots
    • 80 g desiccated coconut
    • 15 g maple syrup (leave out if your apricots are very sweet)
    • 100 g dark chocolate I use 70%
    • 10 g coconut oil optional but it will help make the chocolate topping smooth and creamy

    Instructions

    • Add the almonds to the Thermomix bowl. Chop for 5 seconds / speed 7.
    • Add the apricots, desiccated coconut and maple syrup. Blend for 1 minute / speed 8. The mixture should hold together when pressed between your fingers. If it's not there yet, blend for a further 30 seconds.
    • Add around 1 ½ tablespoons of mixture into each ice cube tray compartment. Press down to compact the mixture. Chill in the fridge until ready to top with chocolate.
    • Clean and dry the Thermomix bowl.
    • Add the chocolate to the bowl. Chop for 5 seconds / speed 8.
    • Add the coconut oil to the bowl. Melt for 4 minutes / 50 degrees / speed 2.
    • Remove the trays from the fridge. Pour around 1 teaspoon of chocolate over each energy bite. Tilt the tray to ensure even coverage.
    • Store in the fridge for at least 30 minutes or until ready to serve.
    • Pop each bite out of the ice cube tray and store in an airtight container in the fridge for up to 7 days or in the freezer for up to 3 months.
