    Thermomix Peanut Butter Chocolate Energy Bites

    These Thermomix Peanut Butter Chocolate Energy Bites combine dates, oats, peanuts and dark chocolate for an easy no-bake snack that feels like a treat.

    If you're looking for a healthy snack that still feels like a treat, these Thermomix Peanut Butter Chocolate Energy Bites are a great option.

    Made with dates, oats, peanut butter and roasted peanuts, they're soft, chewy and topped with a layer of dark chocolate.

    I keep a batch in the fridge alongside my Thermomix Chocolate Apricot Energy Bites for those moments when I want something sweet with a cup of tea or coffee but don't want to reach for biscuits or chocolate.

    For this recipe I use these silicone ice cube trays and find them to be the perfect size for making bites. The silicone also makes them very easy to 'pop out' the bites.

    Ingredients You'll Need

    You will need the following ingredients for this recipe. Exact quantities can be found in the recipe card at the bottom of this post.

    • Pitted dates - give natural sweetness to the energy bites.
    • Smooth peanut butter - helps bring all the ingredients together. Also high in protein, fibre and healthy fats. Choose a natural peanut butter with no added sugar and fewer additives for the healthiest option.
    • Rolled oats - helps give structure to the energy bites. High in fibre and protein, which helps keep you satisfied for longer.
    • Maple Syrup - adds extra sweetness and helps bind the mixture together. Depending on how sweet your dates are, you may be able to reduce or omit it.
    • Roasted peanuts - gives interesting crunchy texture to the energy bites and adds an extra protein boost. Choose salted or unsalted depending on preference.
    • 70% Dark Chocolate -  adds a rich chocolate layer. Also a good source of antioxidants.
    • Coconut oil - this is optional but will help make the chocolate layer smooth and creamy.

    How to Make These Thermomix Energy Bites

    Full instructions with exact steps can be found in the recipe card at the end of this post.

    Start by soaking the dates. This will make them softer and easier to blend into the mixture.

    Weigh the dates into the bowl, then cover them with water and leave them to soak for around 15 minutes.

    Once they have been soaking 15 minutes, drain the dates (use a colander or the Thermomix simmering basket) and place them back in the Thermomix bowl to chop them up.

    Then add the peanut butter, oats and maple syrup to the bowl and mix until well blended.

    The mixture should hold together when pressed between your fingers. If it's not there yet, blend for a bit longer.

    Next, we add the chopped peanuts to the bowl and use a spatula to mix them in.

    I prefer to chop the nuts using a knife, as I find chopping them in the Thermomix leads to inconsistent results - I find that some end up a fine dust while others remain whole. It just takes a minute to chop them the old-fashioned way, with a knife!

    Next, press around 1 ½ tablespoons of mixture into each compartment of an ice cube tray. A silicon ice cube tray will make it easier to pop the bites out later.

    I have these silicon ice cube trays and find them to be the perfect size for making bites.

    Now put the trays in the fridge to chill while you clean the bowl and melt the chocolate.

    To melt the chocolate, start by chopping it up, then add the coconut oil and melt it all together for four minutes.

    Once melted, remove the trays from the fridge and spoon over around 1 ½ teaspoons of chocolate onto each energy bite. Tilt the tray to ensure the chocolate coats each compartment evenly.

    Now, chill them in the fridge for at least 30 minutes, or until ready to eat.

    Storage

    Store these Peanut Butter Chocolate Energy Bites in an airtight container in the fridge for up to 7 days.

    They also freeze really well and will keep for up to 3 months, making them perfect for batch making. Simply thaw a few in the fridge whenever you need a quick snack.

    Frequently Asked Questions

    Can I use crunchy peanut butter instead of smooth?

    Yes. Crunchy peanut butter works well in this recipe and will add even more texture to the energy bites. Since the recipe already includes chopped roasted peanuts, the difference isn't huge, but it can give the bites a little extra crunch.

    Can I make these without maple syrup?

    Absolutely. The maple syrup adds a little extra sweetness and helps bind the mixture together, but if your dates are soft and naturally sweet, you can leave it out. If the mixture seems a little dry, simply blend it for longer or add a small extra spoonful of peanut butter or a spoonful of the water you used for soaking the dates.

    Can I use quick oats instead of rolled oats?

    Yes, quick oats can be used instead of rolled oats. The texture will be slightly softer and less chewy, but the recipe will still work well. I prefer rolled oats because they add more texture and help make the bites more satisfying.

    Can I freeze Peanut Butter Chocolate Energy Bites?

    Yes. These energy bites freeze beautifully and can be stored in an airtight container in the freezer for up to 3 months. Simply transfer a few to the fridge the night before, or leave them at room temperature for 15–20 minutes before eating.

    Why do I need to soak the dates?

    Soaking the dates softens them, making them much easier to blend into a smooth, sticky mixture. This helps the energy bites hold together properly and creates a better texture. If your dates are already very soft and fresh, you may be able to skip this step.

    Are these energy bites high in protein?

    Each energy bite contains approximately 4g of protein from the peanut butter, peanuts and oats. For an extra protein boost, you can add a tablespoon or two of protein powder to the mixture. If the mixture becomes too dry, add a little of the water used to soak the dates until it comes together. Vanilla and chocolate protein powders both work well with the peanut butter and chocolate flavours.

    Equipment

    Ingredients

    • 150 g pitted dates
    • 220 g smooth peanut butter
    • 50 g rolled oats
    • 30 g maple syrup
    • 75 g roasted peanuts
    • 100 g 70% dark chocolate
    • 10 g coconut oil optional but it will help make the chocolate topping smooth and creamy

    Instructions

    • Weigh the dates into the Thermomix bowl. Cover the dates with water and set aside to soak for 15 minutes.
    • Drain the dates (use a colander, sieve or the Thermomix simmering basket) then place them back into the Thermomix bowl. Chop for 10 seconds / speed 7. Scrape down the bowl.
    • Add the peanut butter, oats and maple syrup to the bowl and mix for 30 seconds / speed 8. Scrape down the bowl and repeat 30 seconds / speed 8.
      The mixture should hold together when pressed between your fingers. If it's not there yet, blend for a further 20 seconds.
    • Use a knife to chop the peanuts into small pieces. Add to the bowl and use the spatula to mix well.
    • Add around 1 ½ tablespoons of mixture into each ice cube tray compartment. Press down to compact the mixture. Chill in the fridge until ready to top with chocolate.
    • Clean and dry the Thermomix bowl.
    • Add the chocolate to the bowl. Chop for 5 seconds / speed 8.
    • Add the coconut oil to the bowl. Melt for 4 minutes / 50 degrees / speed 2.
    • Remove the trays from the fridge. Pour around 1 teaspoon of chocolate over each energy bite. Tilt the tray to ensure even coverage.
    • Store in the fridge for at least 30 minutes or until ready to serve.
    • Pop each bite out of the ice cube tray and store in an airtight container in the fridge for up to 7 days or in the freezer for up to 3 months.
