This Thermomix Shortcrust Pastry is so easy to make, thanks to the Thermomix. This buttery, flaky pie crust is perfect in a variety of pies and tarts.

This is my go-to shortcrust pastry. I use it for so many things - delicious desserts such as Thermomix Apple Pie and Thermomix Chocolate Tart or savoury dishes such as my Thermomix Quiche Lorraine.
It is buttery and flaky and delicious and I know you are going to love it.
You are also going to love how easy it is to make thanks to the Thermomix. Pastry is traditionally one of those things that people are scared to make from scratch.
But the Thermomix makes it super simple, so you don't need to be scared to make homemade pastry any more!
And - once you try homemade pastry, you won't want to buy the shop-bought version ever again.

Ingredients
Shortcrust pastry uses very basic ingredients - flour, butter, water and also sugar if you are making a sweet shortcrust pastry.
The secret is in making sure that the butter and water and COLD before you start - so butter straight from the fridge and chilled water.
- Plain Flour
- Butter - cold from the fridge. You can use salted butter, or use unsalted butter with ½ teaspoon salt.
- Water - chilled
- Sugar (for a sweet pie crust, omit for a savoury pie crust)

How to make shortcrust pastry in the Thermomix
Making shortcrust pastry in the Thermomix is super simple. You literally just add all the ingredients to the Thermomix and mix it together for 20 seconds.

When it comes out of the Thermomix it should be crumbly. But it should come together easily when you press it together with your hands.
Pastry is best when it is handled less, so try to do this as quickly as possible. There is no need to knead it, just bring it together with your hands and shape it into a disc.

You should still be able to see some bits of butter dotted throughout the pastry. This is what helps it become nice and flaky.
Now you just need to wrap it in cling film and leave it in the fridge to rest and chill for 30 minutes before rolling it out to use.

Thermomix Shortcrust Pastry
Ingredients
- 175 g plain flour
- 115 g butter cold from fridge
- ½ teaspoon salt only if using unsalted butter
- 10 g sugar only for sweet shortcrust pastry
- 50 g water
Instructions
- Chop the butter into small pieces and add to the Thermomix bowl together with the flour, sugar salt and water.
- Mix for 10 seconds / speed 4. Scrape down the sides and repeat.
- Turn out onto a floured surface and quickly bring it together with your hands. It will look quite crumbly to begin with, but should come together easily.
- Use your hands to brig it together and shape into a flattened disc.
- Wrap the disc in plastic wrap or place in an airtight plastic bag and chill in the fridge for 30 minutes to an hour before rolling out to use.
