    This Thermomix Banana Cake is light and fluffy with a delicious and irresistible cream cheese frosting.

    I make a lot of Thermomix banana bread for my kids - they love it in their lunch boxes or for an after school snack.

    But sometimes I like to mix it up a bit and make a banana cake instead. It's similar but is made even better by the addition of irresistible cream cheese frosting.

    Ingredients

    Banana cake is a great way of using up any overripe bananas sitting in your fruit bowl.

    Here's what else you'll need (exact quantities can be found in the recipe card at the bottom of this post).

    • Bananas - Make sure you choose nice ripe bananas for this Thermomix banana bread recipe. You want them to be nice and ripe to get the natural sweetness out of the fruit. They are best when they are starting to go brown on the outside, but not so ripe that they are mushy on the inside.
    • Vanilla extract
    • Butter 
    • Brown sugar - If you don't have brown sugar, you could just use caster sugar or granulated sugar. However, the brown sugar gives it an incredible richness.
    • Eggs 
    • Plain flour - aka all-purpose flour. You could substitute for self-raising flour and skip the baking powder, but I think you always get better results using plain flour and baking powder.
    • Baking powder
    • Bicarbonate of soda - aka baking soda.

    For the Cream Cheese Frosting

    • Icing sugar - if you don't have icing sugar, you can use any white sugar and mill it first: do this for around 30 seconds at speed 10. However, I don't think the results are ever as good as shop-bought icing sugar.
    • Cream cheese - I use Philadelphia.
    • Butter
    • Vanilla extract

    How to make Banana Cake

    Making banana cake in the Thermomix is quick and easy. Exact step-by-step instructions can be found in the recipe card at the bottom of the post.

    Start by mashing up the bananas with the vanilla extract in the Thermomix. Then set this mixture aside.

    Next cream the butter and sugar together, before mixing in the eggs and banana mixture.

    Then you just need to add the flour dry ingredients and mix for 20 seconds. And it's done!

    Transfer the cake batter to a lined cake tin and bake it in the oven for around 45 minutes, or until a knife comes away clean when inserted into the middle of the cake.

    I use an 8-inch cake tin for this. You could also use a round cake tin.

    Now remove the cake from the tin and transfer it to a wire rack to cool completely before adding the frosting.

    How to make Cream Cheese Frosting

    You are going to love this cream cheese frosting! And it is so easy to make. All you need to do is add all the ingredients and mix them together for 30 seconds!

    Now you just need to use a palate knife to smother the cake with the frosting before cutting and serving.

    Equipment

    • 8-inch cake tin
    • baking paper

    Ingredients

    For the cake

    • 3 ripe bananas
    • 1 teaspoon vanilla extract
    • 150 g butter
    • 150 g brown sugar
    • 2 eggs
    • 240 g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda (baking soda)

    For the cream cheese frosting

    • 300 g icing sugar
    • 100 g butter
    • 250 g cream cheese (eg. Philadelphia)
    • 1 teaspoon vanilla extract

    Instructions

    • Pre-heat the oven to 160C / 320F.
    • Line an 8-inch cake tin with baking paper.
    • Place the bananas and vanilla extract into the Thermomix bowl. Mix together for 5 seconds / speed 5. Transfer to another bowl and set aside.
    • Add butter and sugar to the Thermomix bowl. Mix for 30 seconds / speed 5.
    • Add the eggs and mashed banana mixture to the bowl. Mix for 10 seconds / speed 4.
    • Add the flour, baking powder and bicarbonate of soda to the bowl. Mix for 20 seconds / speed 5.
    • Pour the mixture into the prepared cake tin.
    • Bake in the oven for 45 minutes, or until a knife comes away clean when inserted into the middle of the cake.
    • Remove from the tin and allow to cool on a wire rack. Ensure it is completely cool before adding the frosting.

    For the cream cheese frosting

    • Add the icing sugar to the Thermomix bowl. Mill for 10 seconds / speed 9. This ensures there are no lumps and you have smooth frosting.
    • Add the butter, cream cheese and vanilla extract. MIx for 30 seconds / speed 5.
    • Use a palate knife to smoother the frosting over the cake before cutting and serving.

      This banana cake was delicious! I used salted butter for the cake and half salted, half unsalted for the icing and vanilla bean paste instead of extract in both. It was so simple and turned out perfectly. Next time I would halve the icing ingredients as this was enough to ice two cakes and would consider adding some lemon juice for something a little less sweet. Will definitely be making again!!
